    Liliko'i Bars Recipe
    Ingredients:
    For the crust
    2 cups flour amzn.to/3nGkduy
    3/4 cup unsalted butter
    1/2 cup brown sugar amzn.to/37BGSTe
    1/2 teaspoon salt amzn.to/2Wz4fpW
    For the liliko'i custard
    4 large eggs
    1 1/4 cup granulated sugar amzn.to/3peFbkf
    1/3 cup all purpose flour
    3/4 cup liliko'i juice
    1/4 cup powdered sugar amzn.to/3mAYK4N
    Directions:
    1. Preheat oven to 350F.
    2. To a large bowl add flour, butter, sugar, and salt. Mix until well combined.
    3. Spray a 9x13 inch baking dish with non-stick cooking spray. Pour crust mixture into the pan and gently pat down to create the crust layer. Bake for 15 minutes. While the crust is baking, begin the liliko'i layer.
    4. To another bowl add eggs, sugar, and flour. Mix until well combined. Then add liliko'i juice and mix again until well combined.
    5. Once the crust has finished par baking, pour the liliko'i mixture over the top. Bake for 30 minutes. The liliko'i curd will puff up and then sink down. Once it has sunk down and the edges have just begun to brown it is done.
    6. Cool completely then cut into squares. Sprinkle with powdered sugar and ENJOY!

In Nicaragua we call the fruit Maracuyá or calala, and we only get the yellow meat ones usually. I am an addict to acid fruits, just like these, pineapples, dragon fruits, citrics, etc. I was actually thinking that if you can make lemon bars, of course there has to be a form of making maracuyá bars :3 I'm not surprised that you hawaiians already came up with the same genious idea. There's also a mousse made with maracuyá that's to kill for. Maybe you can look into it and try that recipe sometime.
But hundreds of blessings for sharing this recipe, I'll try to make it very soon, and lots of times because hot season is already starting :3

This looks so GOOD! Not sure if it's liliko'i season right now. Where can I buy the puree or concentrate locally? Foodland, maybe?

I don't sorry. But you can replace the liliko'i in this recipe. You may have to adjust the sugar a little.

Would I be able to use the lillikoi juice in the can, never seen actual fruit here in Cali.

I’ve never tried it but I’d assume you could. You’d have to adjust the added sugar likely as those juices are usually sweetened. Let me know if you try it. Happy Holidays.
