    I needed to hear “do it out of love, not out of fear”. I’ve been meaning to begin canning for many years. With how the world is these days I find myself in fear and I feel almost panicked to get my pantry going. This was a great reminder to do it out of love and lean into the word and promise of Jesus. Thank you Heather ❤️

    Black eyed peas are better in pint size and only soak in water and a little vinegar for about 8 to 12 hours. No cooking before canning. Great video Heather!

      God love and bless you, kim. It's so hard. people don't "see" your brain injury. But it is so prevalent. It's been my biggest challenge to recover from.

I will keep watching and even look for older video's of where you make bread. Another prepper told me to look for you as we live in the same state[ In more way's than one].     So good to see you coming back on UA-cam! I know that your journey has been a struggle and I pray for total recovery for you and your family . I watched a lot of your videos on canning back when I was thinking about learning to can . You made it look easy and you always taught to do it by the standards that the canning books recommended so I started canning ! I first water bath canned some plum jelly it turned out so good and delicious and really was easy to do and I was hooked! I then I pressure canned some green beans and they came out prefect ! It’s not a chore to me it’s like a hobby that I completely love to do . I get so excited to get some food and go to my canning books or videos of my go to “Canning Queens” and can it up ! Seeing the food all processed and sitting on my pantry shelves brings joy to my heart . Plus it just tastes so much better than canned food from the store ! I just wanted you to know what a blessing you are to us watching your Videos on canning , and any food preparation of all kinds .. even videos of you sharing your healing journey all of it is a blessing to us as you witness that you can go through anything in life when you have God by your side! Blessings!💕

      hahaha I am thinking about investing in a small greenhouse, because I think long term, I am going to need it to extend my ability to grow food for a longer season!

      @@TheKneadyHomesteader absolutely try out a greenhouse! I began with 2 buried 18 gallon tubs; I added framed glass for top/lid. Worked well! I planted cherry tomatoes in one; arugula and cabbage in the other. Now I've made a stand up greenhouse out of old windows and a glass door. With a little attention, I grew tomatoes, bell peppers, potatoes, green beans (bush), jalapeños , 3 different lettuces and sprouts Throughout this winter.

    I agree with you about the bacon, I wrapped mine in parchment paper rolled it up and canned it. It turned out mushy also. Love to can green beans, I put a tablespoon of dried onion in each quart jar when I can them. They taste great.

    I love canning raw packed sweet potatoes and raw packed sweet potatoes in brown sugar and water. I also love doing the same with carrots!

    Such a great video.
    My 17 year old cat has been sick lately and dropped a lot of weight. The only thing she will eat is my canned chicken and venison. Even commercially can cat foot is off her list.
    So glad I bought and canned a LOT of chicken before prices and availability became an issue.

    It is so great to see you doing well I lost my husband two weeks before you so I kind of went through this whole thing with you. Tahat being said, I love to can corned beef it is so good. I also can my stuffing from thanksgiving, along canning the left over turkey then I can just open a jar of each with some home canned cranberry sauce and enjoy thanksgiving all over again

    I am right there with you on the visuals and texture. I can't bear to eat things that look awful.... "ugly" food.

    I cant tell you how much I enjoy seeing you in videos again! My last post to you pre-accident was to all your viewers to please consider subscribing to this ladies channel because you were so close to the 100 thousand subscriber mark and you sooo deserve that. Well, look at you now, a quarter of a million subscribers!!! You are the sweetest dear heart and so knowledgeable that I dont know who WOULDNT subscribe lol.
    I have a big personal announcement that you didnt know until now, but that you are a huge part of my decision to do it; and that is, I have made my first time purchase of a pressure canner and the supplies that go with it, at the ripe old age of 62 lol. Different physical disabilities than you, but same day, I will never be able to do huge all day canning sessions but rather small, slow mini batches. And that is ok. You helped me to realize that. And lets talk homemade bread. I have made a couple (lol) of homemade batches of dinner rolls, again not many but I never EVER had the courage to buy a pack of yeast before watching you. You gave me the courage, it was you Miss Heather, so thank you for sharing and thank you for you! God bless you. Shirley

      Thank you so much! Yeah, I am trying to get my right wrist to heal. It is still badly fractured, so kneading is not something I should be doing. LOL But I sneak a load in here or there. Go back to see surgeon in APril, so pray I am healed and I can get back to using my hands again.

    OH that twinkle is BACK in your eyes and you look absolutely beautiful! You are so spot on about the love that goes into our jars and I often will just stand in my pantry and look at the jars of food; vibrant colors and much of it we grew in our garden. There truly is a peace in canning these things for our family. I am so glad Leanne invited you as I find her an absolute joy in her videos! SO great to see you !

    Thank you for coming back to something you love. I enjoyed your very first video. I look forward to going back and seeing your videos. Prayers sent to you dear as you go forward. I do my potatoes like this. Red Potatoes does not have the starch the other potatoes. I quartered them then cut 1" sections. Warm-hot Quarts jars with red potatoes, 1 t. Kosher Salt, 1 t. Parsley flakes, 1 t. Garlic powder, 1/2 t. Basil, . Fill hot jars with boiling water. 1" head space, De-bubble, Wipe rim with vinegar, then attach lid and ring. Tip the jars end to end to mix ingredients. Pour the left over vinegar about 1 T. spoon in Pressure Canner water. This keeps the jars from turning milky. I vent 10 minutes and then do 10 # pressure for 40 minutes. Let pressure drop to 0. then remove to towel to cool. I also tried Minced onions, Red Pepper flakes and they were so good not mush. Now this is just me but I cut my time back by 10 minutes if I had more to can because the water is already hot. I got this recipe from another Homestead Heart but knew it would help you to like canning the potatoes

    I gave up on green beans since we preferred the taste of frozen ones...but I'm going to give yours a try with some peppercorns...sounds yummy. From watching your old videos(I've been watching for a few years now), I canned up so much apple pie filling this summer from some apples that were gifted to me! And I made some saskatoon/sour cherry pie fililng to empty part of my freezer. Thanks so much! I'm so happy to see you back. The joy you exude when you're talking brightens my day every time I watch you. Love you! You're doing so well, brain injury or not, you're doing awesome things for the canning world.

    I am so glad to see you again - you look wonderful and so happy. I know your heart is still in disrepair but you are working your way to being back to your old self. I also know it will be a little time but I can't wait for you to start doing your videos again. We miss you so much. My favorite thing to can is green beans as well as tomato sauce/juice. Things of that sort. I will not can pickles again - they don't always turn out crisp even tho I use the pickling salt. Anyway - glad to see you again - love always - Sue (Indiana).

    Heather it was so fun to see you today! I have miss you giggle in your talking and you have your sparkle back in your eyes. Hugs my sister in Christ. I was surprised when you said the 15 bean soup mix you didn't care about. I have canned 15 bean soup mix after I made a pot of the soup or just the beans and spices and tomatoes and stuff to it we love it! It's so easy as a meal. When I can it I do mine in pints so it's a to-go meal. We can roast beef and we love it, what made me do it was have a family member that likes roast beef sandwiches from a certain fast food place and when I figure it out how much goes on a bun that's what we can in a jar for a to- go meal plus other meals. I understand what you say about potatoes and yet that is something we do keep on our shelves I have a family member that loves potatoes and it's a good way to make them fast and easy and like you said such a staple. My son and daughter-in-law do beans in all their food like you said to stretch the meat. We do that as well. I do have a question do like when you have canned or have you canned pumpkin or squash? I have done both and mine get mushy especially the pumpkin. Your blueberry vanilla pie filling have to check out. I will tell you I have made a lot of your jams and given them as Christmas gifts and everyone says where did you get this recipe and I share with them about you. I just want to say big big big hugs. And so much love to you and your family.

    Check out Alaska Prepper's video on canning bacon. It is a very different process but the results are very good and the pieces don't come out melded together but come off the sheet like the kind you can buy that has already been cooked. It would be worth trying!

      @@TheKneadyHomesteader I also like Prepper Potpourri's canning bacon video. Her method has a good look in the jar. Fixing out of jar for breakfast, finish strips look just like bacon cooked in morning. Good to see you Heather. God bless.

    Heather can I say you look and sound amazing. I just checked in on you after watching Jackie from Blessed Beyond Measure b/c she lost her son suddenly. And I wanted to check in to see how you were doing. You ladies that open your lives up to us and share are very inspirational. God is using your situations to reach out to others. I truly admire you and thank you. I remember my Mom saying when she met my Dad and went out to dinner for the first time with him and his parents, she grew up on a farm and her mother canned EVERYTHING...she did not know what a T Bone steak was and that is what they ordered at dinner. She said she chewed and chewed the meat and wanted to spit it out b/c all the meat my Gram canned just fell apart in your mouth. We laugh about that every time we cook steak on the grill. I have never tried canning meat. I like the idea of the par cooked chicken. I may consider giving that a try. String beans were always a favorite of ours! Now my hubby loves to can his home made salsa. He would consider that a staple! LOL Have a great day. I will continue to pray for you and your kiddo's. I hope they are both healing well also.       We still need a video on the correct way to clean our jars after canning. I wash mine in soapy water. ( holding in my hand not emerged in water) I'm not sure that is correct. All the videos I watch no one covers it. Especially if they siphon and are greasy.. yes this has happened lol. I'm only 6 months into canning. So I still question myself.

    I am so grateful to see that spark in your voice and eyes in this video. You are just a miracle Heather. Appreciate you so much. And on the side of "ugly" canning......that is so funny because I canned corned beef with veges a year ago. It was ugly. We did not eat it until recently...........and to my surprise........it was delicious. I have cooked corned beef for years........and none of it could compare to this canned vege stew. So funny !!! Ugliest stuff I have canned, but probably the yummiest. And yes I raw packed meat (which corned beef is already prepared a bit anyways), raw packed veges, and canned it up. Dumped into a pan to warm and made some fried cornbread to go with.......and it was phenomenal. I really enjoyed this video because I have had some real blunders in canning that I just had to throw out (and yes.....that is a heartache in itself after all the work....) Glad to see you shine again on your videos gal and the great information you share. God Bless your continued healing journey.

    I miss your videos, so happy to see this, Heather!! I don't worry about meats looking beautiful. If store canned meats were in glass they'd be ugly too, lol. Love this collaboration because you're opinions will make me decide I should or shouldn't try something.

    Yes, Heather, brain damage is real! Mine came from 7 days on a ventilator and a propofol drip after a traumatic hip fracture. I wasn't expected to make it, or walk, or anything. I walk, and I grow the most gorgeous flower gardens you ever saw, and I cook feasts, and I just bought two canners. I can even write my name and type again! I watched you make baguettes, cried over your tragedy, and prayed that our always-good God would give you the same want-to that He gave me. He did. You're even more of a stubborn overcomer than me! I've always said, "I'm not gifted, but I can plod." I'd love to hear about your pantry journey, orr breadmaking journey, or anything you might like to share. You're truly rooted in Philippians 4:13 and Proverbs 31:10-31, and you're such a blessing to so many! You go, girl!

    You can use the bacon in egg casseroles for breakfast. I can my beef stew in big seared chunks. First time I canned beef I had the same result as you. I shredded them and used it to make tacos.

      I freeze my stew meat and usually use it up quick. hahaha I love me a good beef stew with extra potatoes. LOL

    Love to see you holding jars with ease again! You should be so proud of how far you have come!!! I canned potatoes for the first time a year ago, and when they went cloudy I thought they were ruined. We actually love them though! While the jar isn't appealing, I love how it pulls the extra starches out which rinse easily. Then I dump them on paper towels and let them air dry 10 mins or so while my pan of oil heats up and I dry/saute them on very high heat like you would sear meat. Don't try to flip them unless they release easily from the pan. I cook them til golden and crispy and they are a big hit! Guess we need to get all your YT friends to host collabs if it will get you in front of the camera again! 😉😘

    My Dad had a couple of cherry trees in the back yard. I used to be out there picking cherries on an old rickety ladder. He had an old cast iron cherry pitter, but he loved cherry pies. We canned cherry pie filling. One of my favorite memories!

    I am with you on not canning potatoes again. The cloudiness is definitely a turn off. I like to can peaches because they are very expensive to buy. I will definitely try canning pineapple when there's a good sale. Thanks for sharing ❣

      i have never been able to get enough peaches at one time, in bulk, to can them yet. Michigander....they are hard to come by. Good ones, at least..

    Love seeing you again.. praying for your full recovery. I love canning pineapple, meats, chicken (for quick meals), broths and black berries. My neighbor lets me pick blackberries freely - he doesn't use them! I can meats and chicken because it is so easy to grab a can of meat and make it into a meal - no thawing, etc. Other than blackberries and meats, which I intentionally can a lot of, I can out of abundance. If I get too many tomatoes I will can tomato product of some sort, but I have found dehydrating is my friend. I slice up veggies (some need blanched first!) and some berries. Potato is a favorite to dry, celery, cabbage, onions, etc. dry so well and rehydrate well. Tomatos also dry well, some are seasoned italian, some just a little salt to help the drying, some plain. I had a freeze dryer and used it nearly nonstop for about six months. I then sold it to recoup my investment, kept the sealer which saves chips, cereals, etc from going stale-I have saved a fortune using that sealer! Chips last for months if you just seal them back up after opening. The freeze dryer was great but expensive to operate and I find I can now can and dehydrate what I need. My canning has evolved over the last few years.. I don't can much in the way of veggies any more, but did that for a while and I have plenty.. won't do that again - no more apples - soups.. I just like to can ingredients and put them together as I want later. The soups I canned aren't what we particularly like now so I end up adding to them anyway.. duh. lol. Sorry this is so long, but you do inspire me.

      I love canning jams and jellies too. My family also loves the fact that I do this as they have become their Christmas gifts every year🥰.
      If you can get a good deal on tangerines or are lucky enough to have a friend with a tree, it makes an excellent jam or marmalade. It's like sunshine in a jar! I used the blood orange marmalade recipe from the Ball book but used tangerines.

    You're my hero regarding canning ground beef. I have been canning it pre cooked with onion broth ever since I saw your video on the subject--after my initial texture fail.... Maybe 2 years ago? I keep a huge batch now of home canned onion broth specifically for that one purpose. And beans! I love having all sorts on hand canned. Couldn't be easier and so handy! You do look wonderful, with joy in your face. God is so good. He carries us along as He heals us and teaches us to move forward. Thank you!
