    WOMAN!! As my Daddy used to say, that girl could sell you the clothes you're already wearing! I'm trying all of those suggestions in short order. I'm so so glad you mentioned the soft asparagus, because I despise canned asparagus but love it fresh. That fermented one you showed sounded SO crunchy! That is definitely happening as soon as I find the next sale price on asparagus (or celery).

      Hi Trista! Your comment made me laugh out loud😀! That is too kind. I’m a northern gal but my husband and dad are from the south so my meals have to pass their tastebud test! While canning is my favorite preservation method , I’m all about finding the best option (dehydrating, fermenting, etc) to stock my pantry and take advantage of sales/seasonal produce.       Hi Betty! Thank you for saying hello! Absolutely! When I was a knew canner (and also someone that has limited space) I thought, "If I can this, how will I actually use this" I also skipped over so many recipes because I just couldn't picture how I'd use it. While canning is my favorite form of food preservation, I've started to realize that all of the preservation methods work in tandem (canning, fermenting, dehydrating, freezing) so I thought I'd share the "work around"--fermenting has been such a joy!       Hello Wild Nature Farm! I’m assuming you have OCD, too? 🤪🤦🏾‍♀️ If so, the good/bad news is that it can’t be cured so just embrace it! Several folks I’ve met here on the channel have shared that, which I’ll take as a compliment! Luckily, I’m already employed in a job I love (Public school Coach).     Hello Friend, I devoured this episode with the quickness. As a seasoned canner, you can imagine I've had my share of hit and misses. No problem cause you gotta learn. I have my fermenting kit just not done anything with it. With the high cost of groceries, I have been enjoying my canned goods. And it ALWAYS does my heart good to unload the dishwasher with a few canning jars in it. Easter is coming and I so want to experiment with lemons and maybe lavender or something bright and springlike. Another excellent canning adventure. Be Blessed.

      Hi Martha! It's always good to see you! I hear you about having your share of hits and misses. I was limited to 5 but in my early days of canning when I was still getting my bearings on quantities to can, when to can what, and determining for preservation method (canning vs. freezing vs. dehydrating vs. fermenting) it was rough. But, through it all building the skill of being able to preserve my own ingredients and take advantage of store sales without refrigeration has been so empowering! It's a skill that is practical and cost saving, but somewhere along the way it became my favorite past-time on winter weeknights and in small batches after work during the week to unwind from the day. This isn't to say that the dog days of summer when produce is coming in hard and fast doesn't get rough, but its always, always worth it! Take care friend!

      Hi Roseann! My OCD is real! Fermenting is a method I’ve come to rely on so much more here recently because 1. It’s so much quicker than canning and 2. I truly do have a preference for some things fermented vs canned. Give yourself some grace. I’ll be sharing a pickled cabbage recipe collab tomorrow. Always good to see you, lady!

    Several times I have made a lemon-tarragon asparagus pickle (recipe was from a blog called Putting Up with Erin). BOMB. When asparagus goes on sale, I make that. I may try the fermented route with that now that you've recommended it. I can see making a lovely asparagus soup with the soft asparagus, though. It's never cheap enough that I would ever get around to doing that, but should I suddenly end up with a bushel of asparagus and no lemons and tarragon on hand, then yes.
    Your home cooked recipes look fantastic. I would never think of canning all those relishes, but when I see what you do with them, I must reconsider!
    My favorite thing to do with blueberries is the blueberry lime jam from Kevin West's book "Saving the Season". Using lime zest and ground coriander pumps up the blueberry flavor (he explains about how "terpenes" do this. There's also a version with gin).If you don't have that book, I heartily recommend it - it is full of beautiful poetry, paintings, stories, biographies of epic preservationists, and interesting facts.

    When canning sweet potatoes, try using a light syrup or honey. It can be super mild and light, but it does help with the texture, not sure why. And for the cranberries try canning them in orange juice, it makes a marmalade type feel that feels and tastes like cranberry sauce but is awesome year round. I've been canning since I was about 10, so 30 years or so...

    I just watched your video of what you will and will not can again and throughly enjoyed it. I am your newest subscriber and am looking forward to your upcoming vids.       Hello, lady! Always good to see you! And yes, take the leap and start canning--it’s easier than you think and gets simplistic once you build muscle memory with a few basic steps. Fermented asparagus is so good (embarrassing, I think I repeated this several times, but it’s true!!!)

    I've been canning berry jams and apple butter/sauce for years, but I'd never considered any of these things, and honestly the idea of fermenting is completely new to me (I'd thought it was just pickling? clearly not!), so I can't wait to try some of these things out!
