Hi! First of all sorry for the late reply! I use dark chocolate or couverture, it's a chocolate with al least 55% cocoa but you could also use milk chocolate instead of dark chocolate if you prefer to, in that case it would be milk chocolate with at least 38% cocoa.. If you do use milk chocolate, I would suggest you to use passion fruit for the insert instead of the orange.. which is a recipe that I will be posting soon! I hope this helps ❤
@@CookingFantasies hi again tonight I had 20 guests and I did make your dessert for them with a 72 % dark chocolate and it came out perfectly every one loved it. and a piece of advice for the beginners you should probably double the mirror glaze I had a lot of waste in pouring the mirror glaze over the domes
You could, of course. For the cream, make sure it is very color (place it for 10 minutes in the freezer together with the bowl and whisk you will be using) , then mix rigorously till it thickens. Hi! Unfortunately you cannot use agar agar because it does not tolerate freezing. You will be able to freeze it of course and everything but once it thaws it releases water and makes the dessert kind of soggy and lose shape. You can use the agar agar only for the recipes that do not require freezing to set. I hope this helps💕

Once you glaze teh mousse, you can keep them for up to a week in the refrigerator, they will stay fresh and taste even better, the only problem after the second day, the glaze will get a little bit more rubbery but the mousse will stay fresh as it is covered and protected under the glaze. Otherwise, you can freeze them separate (the mousse and the glaze) for up to a month, and glaze them when you need them. I hope this helps 😘💕
