True old soup no peppers tomatoes yes. What made it special was the Hungarian paprika! I have tons I use it in every soup! Also beef ribs or oxtail is delicious.
Hungarians uses the paprika peppers cut into pieces or keft whole as I recall. If wasn't available where you are then a chili pepper of some sort can be a substitute. Its usually a "HOT" version.

there is a huge mistake: you have to put the PAPRIKA into the onion+fat+meat and not into the water.....if you put into the fat with the onion it keeps RED....if you put it into the water its become brown
@@CliftonCosta Huge mistake indeed. Paprika is the soul of the Hungarian Gulyas. If you don't add the paprika at the beginning it changes the entire dish. Nobody said it should be over cooked - that's why you always remove it from the heat while adding it. It's a golden rule of Hungarian cooking so zip it.
I'd like to try real authentic goulash someday, my mom fooled me into thinking the random slop she makes is goulash but got angry at me when I told her about what it actually was. I think I will try cooking this for myself during the winter season
I’m hungarian myself, this recipe is actually one of the best who I saw from foreigners. I’d say it’s a 95%, and I know probably it’s difficult to find the proper paprika ( tv paprika ) what we use instead of the bell pepper so that’s something what I say it’s fine,but do not put it in the oven. Just low heat,cover, let it simmer,it’ll be be the most authentic you could do. The authentic is hanging over real fire in a Bogrács, that’s the special pot we use to cook it,wich gives a bit of a smokey flavor to it and that’s very important for the authentic. But still,that’s a job well done, if you wanna try,you can use this recipe,you’ll not be dissapointed

you make it so rich :-))) nice way - grat... lard, onion, garlic, meat (beef or pork or lamb - or even fish) and sweet paprika powder always - and pepper, salt, thyme... in this bed you can prepare gulyás... using more or less water, depending on your taste...with more water you will get soup... but... if you need light taste, leave capsicum and tomato.... use small aamount of green pea and a wee mushroom and deer.... :-) hungarian kitchen never boring... and the side dish is pogácsa instead of bread.... :-) your video is awesome anyway :-) thanks for that!
This is excellent but I do not know why you put it back in the oven. I will make this weekend with Rice and Hot Peppers. Thanks for this super great dish.
Bc we mostly receive party tourists from within the EU and lots of morons from the UK. Those people want to get hammered, do drugs and eat hamburgers and pizza by the slice. Cheap flights=cheap people.
What I've heard and read, the version with potato in it is the Austrian version of Gulasch. We eat that all the time in Sweden. Please feel free to correct me if I got it wrong

Not only cooking skills, your chopping skills are best too. Beef cubes chopped equal and uniformly.

Excellent recipe, I think I used a little too much salt and spices but otherwise it was great, definitely gonna make it again.
