Most Delicious Protein Food - Pulses and Potatoes aka Nyoyo/Githeri

  • This is a now a typical comfort food for me filled with Protein and Carbohydrates, give you instant energy and good addition to my menus.
    Growing up it was the meal I never looked forward to eating as it was common place at boarding school. Nowadays I appreciate it even more, but it is pretty simple to make and very delicious.
    All you need to have for this dish are protein packed pulses or beans of your choice and mixture of corn and potatoes.
    Use a chopping board when you can but be careful when making preparations.
    Ingredients :
    - 3 Medium sized Potatoes
    - 1 bunch of coriander
    - 1 large onion
    - 1 tbs tomato paste
    - 1 Vegetable Bouillon Cube for Stock
    Method
    Peel, wash and dice the potatoes
    Peel, wash and slice the onion
    Wash and slice the coriander
    Put 2 tbs olive oil in the pan and heat it
    Saute the onions until brown
    Add the coriander and keep stirring
    Add the diced potatoes and let it cook
    Add 1 tbs of tomato paste and keep stirring, then add the mixture of pulses and maize
    Stir for 2 minutes then add the vegetable stock and let it simmer to cook for about 15 minutes.
    - While it is cooking prepare the avocado that will be added at the end before serving.
    Once the food is cooked, add the avocado on top, sprinkle some pepper and serve.
