Now, I might do something like that for the forth of July weekend, where we are camping outside and it's a nice way to enjoy the great outdoors.

So.. by covering the turkey while it rests, you just made the great crispy skin turn to soft skin because you basically steamed it. Remember, you dont need the turkey to be piping hot, because you are serving it with hot gravy. If you want soft skin, go for it. But, i like mine nice and crispy

I did this recipe 2014 and my turkey came out so juicy and tender, even my mom who has been doing the turkey for 26 years said my turkey was the best ever, even better than fries turkey. the only thing I do different is add celery, onions, carrots, and two navel oranges cut up inside the turkey. I also add and rub dry herbs such as sage, parsley, thyme, rosemary, salt and pepper inside the cavity and it give it such good flavor. I also use an oven bag, put all veggies in bag sit the turkey on the veggies and cook. last hour I remove the bag and baste the turkey with the juices so I can get crispy. BEST EVER.
