    I just roasted my first whole chicken ever. I’m 55 Laura! It turned out great. I’m so proud of myself. I will be doing this once a month. And all the leftovers will go into chicken soup for the fall and winter. Thank you for giving me the confidence 😀🦋💜

    I made this yesterday and I couldn't stop bragging about this roasting temperature and time. I like spicy and flavorful chicken, as a result I totally marinated my chicken overnight in the fridge with 0.5 tbsp garlic paste, 0.5 tbsp Ginger paste, 0.5 tbsp chilli powder, 3 tbsp plain yogurt, 5 tbsp oil and salt according to my taste. I stuffed my chicken with lemon grass, lime leaves, and lime wedges right before putting it in the oven. I roasted mine for an hour and 30 minutes. Omg! This was the best whole roasted chicken in oven forever!!!! And the flavor of lemon grass and lime leaves are so delicious, you just have to try it!!!! Thanks Laura for this great recipe!!!! You are the best!!!

    I made this tonight. DELICIOUS. I combined Laura's recipe and Entertaining with Beth (she uses herbs de provence). I used a 3.4 lb chicken (cooked it 425 at 90 minutes). To season, I salted inside and out, put 1 sprig rosemary in cavity, and used chopped garlic and butter inside the breast skin and basted with melted butter and herbs de provence. I cooked in cast iron skillet. It was DELICIOUS!!!

    I would like to share some tips to improve this recipe (no offence to Laura) as I made this and thought I should share.
    1) Double the seasonoing(add some chilli flakes if u want) and spread that all around the chicken, not just the upper part.
    2)Bake it up side down first and then flip it over after about an hour to get that crunchy crust all over and not just the top and cooks evenly.
    3) Squeeze some lemon on potatoes etc and the chicken as well. Take out the potatoes and garlic after 1 hour or they will burn.

      I was thinking about taking my potatoes out early. I don't like them too dark or hard. Thanks for the extra tip.

      I also do all the above you listed, but she did great anyways. Except I clean out the bird with the lemon then rinse and season the inside as well. I love her using seasoned ((fresh herbed) butter because I do the same but all over the bird.

      I always start mine upside down. I don’t care for citrus with my chicken but upside down is a great tip.

    I'm just learning for my husband and 1 year old baby girl. I tried this recipe, except I substituted the lemon for an orange because it's all we had, and it turned out absolutely amazing!!!!! Thank you so much, it's so hard to trust in recipes, if they will turn out good or not. But not only have you taught me to make my first whole chicken, you taught me sooo many more common knowledge I would have never even thought about, I'm a hero in my husbands and daughter eyes and its all thanks to you!!!!!

      I forgot to emphasize how much this is a miracle for me!! This is simple for some people, but I was a horrible cook and the ONLY thing I could cook was french toast, it's a complete game changer when I'm 22 years old and unexpected I have a baby that relies on me for nutrition, and the only income coming from my working husband. You NEED to know how to cook, this is just one step closer and I sooo appreciate you took the time to post this, all I have to say is... SUBSCRIBE!!! Thankyou again

      xBeautifulxStarx By the time your daughter is a teen, all of her friends are gonna want to hang out at your house because of your home cooked meals. Trust me, I have fed everyone of my (now adult) sons' friends and they all rave about my cooking. Never too old to learn and the internet is such a great forum. I shall subscribe!

      This isn’t the only recipe that is full proof, I have made countless Laura recipes and not one of them failed me. You have to try her Braciole. Im Italian and my family says it’s the best braciole they have ever had.

    I made this last night and I tell you it was ABSOLUTELY DELICIOUS! I have never cooked a chicken at such a high temperature, nor put lemons in the cavity. I was surprised at how juicy the meat was and very flavorful. Thanks for sharing this.

    Just as an advice to people who'd make this recipe for the first time- use a spoon when separating the skin from the meat before putting the butter, because you might pierce the skin with a fork :)

    Hi Laura, I always use this recipe and it never fails. Only few nuances: i roast large carrots as well, i peel chicken skin with the spoon...lol and i use fresh parsley with the butter under the skin. Amazing tips Laura. You are gorgeus lady, very sweet, always straight to the point and thats what i like about cooking. BTW, your lovely outfit and the make up are so delicate and beatiful.

    Just wanted you to know that I cooked a chicken tonight using your 'Whole Roast Chicken Recipe' and it was moist and delicious! I knew how good it was when everyone stopped talking at the dinner table because they were too busy eating and also the other obvious clue was the picked clean carcass laying in the serving platter!     Tried this recipe back in xmas 2014 and we loved it. Then forgot completely until this year we decided to repeat it. I hadn't saved the video back then so i looked for a couple of hours on the net, eventually found it in my emails from back then. I'll do it again this xmas as it was the most delicious chicken recipe we ever tried! Thanks so much again :)

    Thank you so much for these videos Laura! I recently became a stay at home wife, and I've never learned how to cook. I guess I was one of those girls who didn't make dinner.     The chicken turns out very soft and juicy, I liked that.. but I had to turn over the chicken to roast the bottom part as it got soggy being soaked in its fat. The potatoes also came out over roasted after 1hr45min while the onion at the bottom also was soggy.

    Hi Laura, I tried this recipe yesterday and it turned out super yummy. I cant explain how good it was. I was really afraid to try out this dish as it involves a whole chicken but Im very happy I did and I will surely make this again and again and again. The flavor is awesome and the potatoes and garlic are worth fighting for :) For those of you reading this comment, dont be afraid to try out this dish. Oil your baking dish well and dont touch the chicken or open the oven during d baking time.

    After cooking this, I had almost 1 1/2 cups of fat from the chicken at the bottom of the pan, somewhat fried the Potatoes. Should I be trimming excess fat/skin from the rear of the chicken before I put it in? or maybe removing it halfway through?

    I wanted to know if the cooking temperature of 425 for 1 hour and 45 minutes at 6 pounds is accurate.. My chickens are usually 5.5 pounds and 425 degrees for that long or slightly less due to weight seems to almost burn the bird!!! The thermometer gores to 170 internal temperature after 1 hour. or so. Thanks IF YOU COULD CONFIRM TEMPERATURE would be great.

    Oven was too hot. Potatoes are not "carmelized." they are burned. 375F is the proper temperature for what you are doing.

      Wavestrike Electronics Yea, usually when I bake chickens I cook them at 350-375 then I crank up the heat during the last 15-20 min to brown the outside. This way you don't dry the chicken out. Great recipe but people will just need to make a few minor adjustments to make it to their taste. Good job Laura I subscribed.

      Try baking at 375 and test it with a thermometer after about 1.5 hrs. Her bird was 6 lb, mine was 1.56 kg (around 3.5 or 4 lb).

    I made this today and it was very fun to make. My only complaint is that I should've used more seasoning. The legs and thighs were not that flavorful. The potatoes were awesome though.

      Yep, I would have squeezed lemon all over that bird and rubbed that infused butter all over the wings and thighs as well. Ina Garten's roasted chicken recipe is amazing!!

I have watched so many of your videos that it has become my favorite You-tube viewing.     I made this a few night ago, absolutely lovely ! Everything came out perfectly, the veggies were great, the garlic added just the right flavor to everything, the garlic/butter topping and under the skin was amazing. Highly recommended !

    I tell you how to do it, get the chicken, put oil on it,slice onions tomatoes put inside ,put on salt and throw it in to the oven.

    i made this chicken last night and it was soooo amazing. The onions were so sweet, the potatoes had a delicious flavor especially with the rosemary and the chicken so juicy. Thank you for this recipe Laura.

    Just tried this. Tasted so good and instead of applying salt on chicken i rubbed it in to meet. That spread flavour to deep inside. Thx Laura keep up. You're awsome !!!

    Awesome!! just tried this for Easter dinner. The only issue was I found lots of liquid after roasting. Do not know if i did any thing wrong. But...we used it for making gravy... Thanks Laura.

    back when my grandma was alive she would cook roast chicken with stuffing and garlic sauce on top of the chicken. she has been making the same dinner on christmas every 79 years

    Used this recipe today. I'm a novice cooker, as a student this was extremely helpful. The tips on getting the chicken to be juicy were great, the meat came out so juicy and tasty. The roast potato's whilst I slightly undercooked them were divine

    Ok, I'm going to give it a try. It's my first time cooking a whole chicken. So liberating!! I didn't have some of the ingredients Laura had, so I improvised. I mixed my butter with lemon pepper instead of Rosemary and I seasoned the outside of the chicken with black pepper, garlic and seasoned salt. I hope that works. I oiled the pan with Canola instead of olive oil and I put onions and potatoes in the chicken cavity and all around in the baking dish. I seasoned the heck out of everything, so we'll see.

    Laura thanks for this amazing recipe. I cooked this with your gravy. The chicken came out so soft and potato and gravy all together tastes out of the world.. I only add some of my mom's seasoning in the gravy. that's it rest I just followed your recipe to the tee. My boy friend said that is one of the best chicken roast he ever had. I am kind of addicted to your recipes. I loved them all. Thank you.
