These pork chops are notable for their slightly crisp exterior and juicy interior. You may serve them with fried rice or noodles, much like Din Tai Fung does.     500g (17.64 oz) boneless pork loin, cut into three pieces
    50ml (1.69 fl oz) water
    3 tbsps light soy sauce
    1 tsp salt
    1 tsp sugar
    A few dashes of white pepper
    1 tsp five spice powder
    2 cloves garlic, lightly smashed
    0.5 tsp baking soda
    2 tbsps cornflour or cornstarch

    A tool I started using many years ago is a traditional filet knife from the sporting goods section. Very sharp and flexible for deboning and removing thin layers of unwanted tissue.

      Yes you can, just spray some oil over the pork chops before you air fry them.

    Hi Roland, A question please ? can I mix water chestnut flour with corn flour and do I need to crush the water chestnut flower in a pestle and mortar prior to mixing and can I use water chestnut flour in the second addition of flour to make a batter more crispy. Thank you in advance Geoff down under in OZ.

      For this recipe, just corn flour/starch will be good enough, the corn flour is there to help lock in the moisture as well as tenderise the pork chop. It’s not supposed to be “crispy”

      You can, at 180 degrees Celsius, air fry for 10mins before turning it up to 200 degrees Celsius for another 2-3mins
