- Tenderloin Sandwich is the official sandwich of Indiana, I make a breaded version that rivals the restaurant recipe. It's the best one I've ever eaten.
Ingredients:
To make 4 sandwiches you will need:
2 eggs
1/4 teaspoon salt OR MORE like 3/4 teaspoon
2 cups buttermilk
2/3 cup plain flour
4 one inch thick boneless pork chops
3 sleeves of saltine crackers (salted saltine crackers)
3 cups vegetable oil for frying
Never fill your pan more than 1/2 full of oil.
You can marinate up to 36 hours in advance.

I went to college in Marion, In over 50 years ago, and moved away from this area; but I still dream about those tenderloin sandwiches I had back then. No restaurant has ever come close to the Indiana style tenderloin sandwiches. I have searched for a good recipe for these and I will soon try yours. I have happy memories of my college years, and this is just one of them.

I am from Indiana and there used to be a drive in restaurant in Indianapolis that served hand breaded tenderloin sandwiches that were so big you could buy one sandwich and cut it in two and another huge sandwich. So good, yum!

Best ever. I made these for lunch today and I have never tested better. The overnight soak in buttermilk made it so moist it was almost melt in your mouth. I'm from Indiana and proud to have this as our state sandwich. Good job!

Oh, man. Soooo glad I found this. I'm a Midwest kid living in the southwest, and the one place I found that had "pork tenderloin sandwich" on the menu obviously had no idea how they are supposed to be made. I'm cooking this tomorrow night!

Great looking sandwich! From Iowa 60 years ago, and had one on a visit back last year! Unfortunately hard to find in California. Wife is trying to make them tonite, we'll see how they turn out!
First of all thank you Michael for watching! You can pound them out to your own desired thickness and not make them so large around by using thinner pork in the first place. I made them large because you know, they are always large in the restaurants. If you pretty much follow the recipe I know you will be very happy. Oh mannnn! I would kill for one of these about now!!!! One of my all time favorite sammiches! And you make it just like I do my chicken fried steak (with saltines). Dunno why I've never done mine like that. But happy to see just pickles and mustard on it. And then put ham and Swiss cheese and you've got yourself a Cuban sammich! My mouth is watering...LOL!!

We're gonna need a bigger boat ( bun ) lol I never have buttermilk in the house but I always have sour cream. I use it to marinate my chicken so I know it will also work for pork. I like the fact it also cuts out a step by mixing the batter then straight into the crumbs. Thanks Michael, this is a definite WINNER !!!!

My favorite way to eat these, with cinnamon applesauce on it and using a knife and fork! We also use panko, makes it nice and crispy as well.

THX for any input - I enjoy the way you get right to the point and show the finished dish...and don't try to "entertain" us with nonsense...lol!
Thank you Colleen for watching! The soaking of the tenderloins is a bit elaborate, but yes you certainly can cook Chicken Fried Steak with this method. After experimenting I do find this makes the best breaded tenderloin sandwich, the official state sandwich of Indiana. Thank you for your question!

Hey, so this looks so fabulous; I love good pork tenderloin sandwiches, some are not at all great. Real buttermilk sounds so terrific. Trust me, some places don’t use anything that good.
I would like to say I go find very good buns to eat terrific sandwiches like this on. My family’s homemade buns were very special. (not dinner rolls) Graeter’s & Busken in my area make superb buns. Ball Park buns are good. Pepperidge Farm buns are blah. McDonald’s, BK, Frisch’s Big Boy buns are great, if you taste them.
The sandwich looks so terrific. I can’t wait to make it.

I just started watching your videos and I was beginning to think you'd been prowling around my recipe box. Whew, thank god you added crackers instead of crushed corn flakes and flour. Still it's like we're cooking in the same pan.

+TDDSTL I am not sure what to think about that, hum. When in High School, our school did not have a cafeteria so we all had open campus and had to go elsewhere for lunch. I would go to a greasy spoon not far away and would have one of these everyday with fries. There wasn't any pepper of any kind in these, but I imagine it would be good :) I would add the cayenne directly to the pork before you put it into the soak if you don't want all of them to have the cayenne. I will have to try your idea!

I agree, homemade buttermilk doesn't anything like real buttermilk, imo. I never buy pork loin but now I have a reason. I'll give it a try, for sure.

@@AniKhang Aww I'm sorry for the bad experience. Cutting them smaller might help. It's pretty thin, so I wouldn't fry for over 5 minutes or less.

This looks awesome. I've been looking for this type of recipe with the buttermilk. One important item I think you are missing. It must have a thick slice of onion, but my daddy always said, unless you are the cook, don't tell the cook how to cook.

I have not tried that, it might work. Just a guess say 425F for 20 minutes, turning at 10 minutes on a greased cookie sheet.

Looks Great. Mom loved getting these from Mug n Bun over off of 10th there in Speedway. But being here in Greenwood. She'll grab one from time to time at Krispy Krunchy Chicken on 31.
Maybe I could make her one now. But I'm not a fan of Deepfrying or Grease 😐. Maybe I'll try Frying her one up outside on the side burner with some grease on the grill or just have you make her some.lol 😜 It looked Great.
+BigBoyG1 I know a few people that use the side burner outside for frying. It is a great way to do it. I do dispose the frying smell that lingers in the kitchen for 12 hours or so. Plus it is messy, but the food is so so good!

Looks great! I've been researching a lot of pork tenderloin sandwich recipes and I've noticed that cheese is never suggested. Is that like a "taboo"? I would think a slice of provolone or Swiss would go nicely.
I grew up with these giant sandwiches and in all my 60 years have never thought of cheese on this. Your question is a surprise to me and geez if you want cheese on your sandwich then by all means! I'm SO EXCITED about this! I have everything I need to make this, and I love these. I purchased some Soca Cultured Powdered Buttermilk in August for things just like this. I have had many tell me it's fantastic and taste just like fresh buttermilk, so I will find out real soon. I hate to waste it, so I decided to buy the powdered kind. This sandwich has another name too, and I never remember it. I think every state has a name for this one. It's so delicious. It's one of the best sandwiches ever. What kind of oil do you use? I know that makes a difference. Any suggestion? I've had one cooked in butter too, and real slow so it would not burn, and I was shocked that it wasn't tough! I've only had a few in my life, but they sure left an impression on me all these years. I just took the pork out of the freezer, so tomorrow we will have fantastic tenderloin sandwiches. OMGoodness!!!!! I made it!!!!! It is SO, SO, SO GOOD! I could not wait as long as I should have, but I really loved it. My family was a little doubtful, but they loved it too! We will be having this more often. My son melted a slice of provolone cheese on his, and he loved it that way too. It tastes even better than I remembered it. I would have taken a picture, but they ate every bite before I had the chance. I cut all the fat off, and cooked it down to fry them in it, and it really was mouth watering. I have not tried that, might be a mess to clean up.
