How tall is each cake layer? I generally make them 1-1/2” for a 10” or larger cake and of course each of those tiers have 3 layers of cake. But the 8” or small cakes, then I make them 2” cake layers. Is there a different rule of thumb for the HEIGHT of each cake tier?
I don’t think there’s a rule of thumb in that… more a personal preference. I usually end up making each layer under 2 inches when I use 3 layer, or shorter when I use 4 layers or more… I like my cakes to be 5”-6” tall.
This is one of those questions that tormented me as a kid but becomes blatantly obvious when you actually learn the answer.

Interesting method.... but why not use a regular "wedding cake" knife? As a cake server, I'm not going to have a huge sharp knife to work with.
