I used to do basic cakes for her, but we have recently been getting bigger tiered cakes and I was very scared to take orders, I made my first one last weekend and it was a hit and I got 3 more cake orders from people who were at that party. I noticed you didn't get a reply so I'll drop in with some info I found online about this. If it's a cake like a wedding cake that for instance the couple will be cutting in to, they can make their triangular/wedge cut then you just take the cake into the back room or kitchen and cut it in a gridline pattern. That way you can tell how many portions you'll get. Hope this helps somewhat.
My sister’s asked me to make her wedding cake next year as her wedding present, because she doesn’t want to spend a lot of money on her cake. Only problem is I have NO cake decorating experience at all, this has really helped, as I tried before with two tiers and they didn’t look neat! I can’t wait to try again now, thank you!
You should look into cake lace. It's really easy and looks amazing. It can also be made months in advance and put on the cake once it's ready. It also has no real taste so can be used in any cake flavors. Also, learn about freezing cakes. I made a three tier cake for my friend's wedding and everyone thought it was professionally done. Good luck.

This was very helpful! I usually just do decorating for fun and friends and usually just one tier. I've done several two tier grooms cakes but that's it. I just got a call from my niece asking me to do her wedding cake. I said a very nervous "ok" 😳

When storing the cake before serving, do you recommend covering it somehow before puttning it in the fridge? Or, how long is it ok to leave it in room temperarure? 😊

There's so much work behind a 3 tier cake and sometimes people wants a cheaper price for their cake, just because it's a big cake. But as a baker you work hard in a cake like this

I have some questions I hope you can answer .... I have what are the equivalent of pizza rounds I use fro bottom boards, will those be okay? They are NOT grease proof on one side. Also, the dowels ... where did you get them? They look well made And strong! Thank you so much for the continued help!
To find the correct height for the pillars, couldn't you just stand a pillar next to the cake (at it's highest point) and mark it for cutting, rather than pushing it in, marking it, then pulling it back out? Just curious if experience has shown that to be a bad idea.
I love your videos!! But I am curious about the cake board under each tier. In the U.S. we normally use corrugated cardboard, but yours look like some type of shiny plastic?? I would love to use them instead of cardboard ones. The cardboard ones can get soggy after a while if it sits too long.

Cut from the top and serve until gone. Why would it be unstacked?

Please if we can’t have access to royal icing as a glue can we use a chocolate ganache ? Would it work just as good ?
