    Great video!! This was extremely helpful for me. When I make cakes for parties I attend, the host normally asks me to cut the cake. Instead of being a nervous mess, I'll confidently cut away. Thanks again!

    What they do not tell you is if you cut your cake like this (from the center) and put both ends together to keep it from drying out, the cake will melt and fall apart at room temperature. It is better to cut it in triangle shape if you plan on leaving it out.

      Great tip, thank you! Yes, it is more stable with triangles if you want to save it without wrapping up individual slices.

    It really annoys me that someone thinks they can just cancel their order after you actually made the cake! Imposing time and resource costs on you just to flake out 🤬🤬🤬

      I know!! I have policies in place so this doesn't really happen anymore. It's super annoying!

    I've never been sure with this way of counting servings because the end pieces are so much smaller than the other pieces, you know? I usually don't include those pieces in the serving count.

      I understand, I do it like this because there are usually kids or people who just want a tiny piece and those can go to them

      These serving sizes are for servings up to the number quoted. (Or at least that’s what I always tell people.). Because it all depends on how you cut it!

    Hi Karolyn. I love watching your videos. My question is.... how many days does it take you to finish a cake? Like... bake one day, fill the next day, ice the 3rd day and then finish the 4th day? If that is the case, do you freeze and re-freeze the cake or just put it in the refrigerator?

      That's exactly what I do! I'll work on the decorations on the days that I bake / fill / ice so they are ready to go on the cake on the 4th day. And I never re-freeze the cake. It goes in the fridge as I'm working on it, until it is picked up.

    I’m making a 3-tier wedding cake for a friend. She is having 100 guests. What pan sizes work best and should each tier have 3 cake layers?

      For 100 people, I would do 5" / 7" / 9" / 11". I always do 4 tiers for 100.
      3 tiers to feed 100, I would do 8" / 10" / 12". It will be short and wide rather than tall and narrow. But some people don't mind that!

      When I make a cake that's 4 layers, I make it as a double barrel cake. (2 tiers the same size iced into one tall tier). There are supports in the bottom half and a cardboard circle in the middle, so you can't cut from top to bottom. So I still use this guide for that!

    How do i make an 8 inch cake into a 6 inch cake. Finding it impossible to find 6 inch non aluminium 6 inch cake pans?

      You can take a 6" cake circle and place it on top of the 8" cake. Then take a serrated knife and hold it straight and use the cardboard circle as a guide to cut the cake to size.

    @KarolynsKakes I’m sorry to hear that a client cancelled on you because of COVID. I feel like, as a baker, your hard work should still be paid for even though the client’s gathering was cancelled. May future clients consider your hard work.

      It stinks, but luckily I can turn it into a UA-cam tutorial! LOL
      I was able to keep a small deposit, which covered the cost of ingredients and the time to bake, so it's all good.

    I have a question how do I go about asking customers how many servings are they planning to eat they will tell me and I’ll do according to the serving they want and problem is that it’s not enough because the way they cut it. Should I worry about it or just let them know how to cut the cake

      What chart do you use? If you go by the Wilton chart, which is what mine is based off of, I find it to be very generous and I’ve never had complaints of it being too small.
      There is pretty much a standard cake slice size that these charts are based on. A 6” 2 layer cake can feed up to 12. If they have big appetites and only get 4 servings out of it, that doesn’t mean it only is 4 servings! Lol
      I usually will show people (using my hands) how to cut it. So I’ll say…cut it in half this way (hand motion over the cake), then cut slices this way. They pretty much get it when I do that.

      @@ODY0319 I would explain to them that the serving charts are based off of the standard size slice (I have to look up the exact measurements I’m not sure what it is). Then say if they like to eat more cake, then they should get a bigger size.
      Or maybe you just make it bigger and charge accordingly. So if they need something to feed 20, make it to feed 30 and charge for it to feed 30. Because if you tell them you have to make it bigger, they could complain.

      If I'm torting two 2" high 6" cakes to get 4 layers, it's 12-16 servings.
      If I'm making a 4 layer cake with 2" high 6" cakes without torting, I will make a double barrel cake (supports in the bottom part to support the top part). It essentially will be 2 tiers iced into one. That will feed 20-24.

      Each tier is 4.5 - 5 inches tall. So the total height is approx. 13.5 - 15 inches tall.

      Oops, I may have misunderstood. A 3 layer cake is approx. 7 inches tall. People always say layers when they mean tiers, but I think you actually meant layers LOL

      I usually just motion with my hand to show them the way I recommend to cut it when they pick it up.
