How to Decorate a Wildflower Smash Cake
My niece will be turning 1 in a few weeks! My sister wanted to decorate her smash cake for her pictures, so I told her I would make a video showing her how to decorate it. I put together some of the inspiration pictures that she sent, and this is the cake I came up with.
Vanilla Cake: Bake at 325°F 10 minutes then rotate and bake another 15 minutes until toothpick comes out clean and cake springs back when touched
2 cups Sugar
1/2 cup Oil
3 Eggs
1 T Vanilla
1/2 cup Sour Cream
2 1/2 cup All Purpose Flour
1 T Baking Powder
1 t Salt
1 1/4 cup Milk
Buttercream Icing:
(This is the recipe used in this video…I usually double this recipe when I make icing for icing a whole cake. It fits perfect in the stand mixer)
1 Pound Room Temp Butter
1 T Vanilla
4 cups Powdered Sugar
1/8 cup Milk if needed

    My Kitchenaid mixing bowl is 4.5 qts. Am I going to have a disaster if I use it to make this recipe? Also, I’m confused about the varieties of buttercream. Is one style better than another for piping? I’m going to attempt some of what you showed in your rosette piping video.

    • @bakingwithryan331
      @bakingwithryan331 4 місяці тому

      You will definitely want to scale down the recipe for your bowl. Maybe do 3/4 of the recipe. This icing is very smooth on your palette…no grittiness from the sugar…it is also great for piping designs or flowers. I also liked using it for the rosettes. A typical American buttercream recipe is fine for decorating, this has just become the recipe I like to use the most especially for taste

    Do you keep the extra buttercream refrigerated as you’re working on decorating the cake, so it doesn’t get too warm? If I making the icing a day or 2 before decorating the cake, should I use it chilled, or leave it out on the counter for awhile before attempting the rosette work? Thanks!

    • @bakingwithryan331
      @bakingwithryan331 4 місяці тому

      I do not keep the extra in the fridge while I’m decorating. If you make the icing a few days ahead of time, keep it in the fridge until about 12 hours before you want to decorate. If you are making rosettes, you should be able to mix by hand just to soften it up. But if you’re trying to smooth ice a cake. I would put this icing back on the mixer until the consistency is smooth. It will help to get all the air bubbles out

    I think they look great. Your stems are better than most because the small tip made them a better scale than the single zigzag with fatter tip. And the way you did the pink flowers created a partially opened rosebud. Love how you got the curling vines by using a tiny round tip and over-squeezing the piping bag. Clever! As for the cracking technique - you waited almost long enough to make it work.

    Thank you for your video!!! 🌸 May I have some advice? Lol Being that im in this TEXAS heat….do you think I could add a few tablespoons of meringue powder for more stability??? Cause omggg…I made the mock meringue BC but the cake started to sweat and melt so fast at room temperature INDOORS😮 Everyone loved it but I was mortified lol🤭🤣

      Thank you!! I have never added meringue powder to a buttercream before, so I’m not entirely sure…I did however just look it up, and it does look like you can add it and it acts as a stabilizer. You could also add some extra powdered sugar…it will make it sweeter, but it will also help to thicken it so that hopefully it would hold up better. I hope that helps!!

    I liked watching how that buttercream came together at the end. Does it taste really buttery? Looking forward to the decorating you do🙃

      Thank you!! It is buttery, but not too buttery if that makes sense. It pairs perfectly with a cake to not be overly sweet like a traditional American buttercream

      Very cool- that takes patience! Do you think it would work to half the recipe or can you freeze some of it? It makes a lot!!
