Make a scrumptious DUTCH APPLE PIE for your Holiday feast
Who's ready for some pie??? In this video, I will show you how to make a scrumptious Dutch Apple Pie with caramelized apple filling, topped with a streusel crumble. It'll be a huge hit this holiday season. So, let's get started!
***NOTES: Baking Temperature is 425F, not 350F as shown in the video***

PIE DOUGH INGREDIENTS:
All purpose flour 315g (2 1/2 cups)
Unsalted butter (cold, cubed) 190g (3/4 cup)
Salt 6g (1 tsp)
Whole egg 56g (1 large)
Ice water 68g (1/4 cup)
White vinegar 14g (1 tbsp)
***NOTES: Have your pie crust rolled and ready to go before you prepare the filling. You'll only need half of the dough recipe for one 9" pie***
APPLE FILLING:
Apples (Granny smith and honeycrisp) 1000g (6-7 pcs peeled and sliced, 1/8" thick)
Brown sugar 110g (1/2 c, packed)
Granulated sugar 100g (1/2 c)
All-purpose flour 40g (1/3 c)
Salt 2.5g (1/2 tsp)
Cinnamon 3g (1 1/2 tsp)
Nutmeg 1.5g (3/4 tsp)
Lemon juice 20g (2 tbsp, about half lemon)
Lemon zest 0.25g (1/4 tsp)
Vanilla paste 5g (1 tsp)
***NOTES: If the filling starts to stick to the pan, add 2 tbsp of water at a time and continue cooking until tender***
STREUSEL TOPPING:
Unsalted butter 113g (1/2 c or 1 stick melted)
All-purpose flour 135g (1 1/8 c)
Granulated sugar 50g (1/4 c)
Brown sugar 110g (1/2 c)
Salt 1.25g (1/4 tsp)
***NOTES: Crumble up the streusel before placing on top of the pie***

can i use hand mixer as I dont have a stand mixer
A hand mixer is not powerful enough, not made for kneading dough. You can knead by hand, but it will require some muscle strength. Thank you for watching.

Where do I get the recipe
Hi Victoria, recipe is in the description box. But here it is along with the instructions: Ingredients: Unsalted butter 150g Granulated sugar 137g Salt 4g All purpose flour 125g Baking powder 5g Egg yolks 35g Whole large eggs 190g Lemon zest 1 pc 1. Melt butter until very hot but DO NOT BURN IT. 2. Mix together sugar, salt, and lemon zest. 3. Sift flour with baking powder. 4. Add 1/3 eggs to sugar mixture, mix well. 5. Add 1/3 flour and alternate with eggs and mix well. 6. Temper in hot butter and mix well. 7. Place plastic wrap directly on top of batter, leaving a small opening. 8. Refrigerate over night. 9. Generously butter and flour pan, fill 3/4 full. 10. Bake at 425F until it crowns, then shut off oven temperature and bake until it has a light golden color. 11. As soon as they are removed from the oven, flip madeleines onto their side to avoid darkening.

Pan size?
8.5L X 4.75W X 4.375H INCH
mine is not rising 😢 not sure what i’m doing wrong, room temp ingredients, could my 10” pan be too big? and or just not heating up properly ?
The pan size is fine. I would double check your oven temperature by placing a thermometer inside your oven. Sometimes the temperature sensor inside your oven could be off. My old oven was always off by 25 degrees.
Also, what type of pan did you use?
Can I use all purpose flour ?
I haven't made it with AP flour but I would reduce the milk content to 130g to start and add a little at a time if necessary to reach the right dough consistency.

Should we wait for the butter to cool off
Once you have mixed your egg with sugar and flour, add the warm butter in 3 increments, no need to wait for butter to cool.

Not safe using plastic wrap in baking. It has gasses that release when in a warmed environment. Not a good idea.
