WOW Wattleseed Cheesecake 👏👏 My sister couldn’t work out if she loved the base more or the filling. Who has tried Wattleseed before?
It’s a rare native spice that is versatile and uniquely Australian 🇦🇺 Wattleseed has like a strong coffee, chocolate, and hazelnut aroma and flavour. I wasn’t sure how it will taste. I can’t explain to you how good it is!
I also thought I’d also share the joys of making videos where things don’t go all that well but the next clip is like nothing even happened. What do you think I said
🥣 Ingredients
For the Base:
2 packets of Tim Tams
80g butter, melted
1/2 cup dates, finely chopped
For the Filling:
500g cream cheese, softened
1/2 cup icing sugar
1 teaspoon vanilla extract
1 teaspoon orange blossom water
200ml thickened cream
2 teaspoons ground wattleseed (nutty, coffee-like flavour)
For the Garnish:
1 packet of Tim tams

Prepare the Base:
grease and line a 20cm springform tin with baking paper
Crush the Tim Tams in a food processor until fine.
In a bowl, mix with the melted butter and finely chopped dates until well combined.
Press into the base of the lined springform tin.
Chill in the fridge.
Make the Filling:
Beat the cream cheese, icing sugar, vanilla, and orange blossom water until smooth.
In another bowl, whip the thickened cream until soft peaks form, then by hand gently fold into the cream cheese mixture with the ground wattleseed. (substitute this with coffee or chocolate)
Pour over the biscuit base and smooth the top. Chill in the fridge for an hour or so, Remove from tin. Wrap with extra packet of tim tam and return to fridge for 4 -5 hours.
Garnish:
Top with a few lilly pilly berries or flowers from your garden for a fresh garnish
Slice and serve chilled.
