From Persia with Love: The Ultimate Vegan Soup Recipe Revealed

  • Recipe Below👇🏽 Ash reshte soup in the making 👏 the famous Persian soup you all need to try. I think we can all agree that soup is one of the best things in this wonderful world 😋
    8 litres of water (approximate)
    2 bunches of Chopped parsley
    250g of Chopped spinach (keep chopped stems separate)
    200 grams Ashe reshte Noodles or Chinese thin noodles ( if using Japanese style udon noodles, use 150 grams as it is much thicker)
    1 can of chickpeas
    1 can of lentils
    1 can of Red beans
    1 can white butter beans
    1 cup Olive oil
    Dried mint
    Tumeric
    4 onions
    4-6 garlic cloves
    1/2 cup olive oil
    Yogurt and minced chili to garnish
    In a large pot, bring the water to a boil, add salt
    Add spinach stems and boil for 3-4 minutes
    Add chopped spinach and parsley and allow to further boil for approximately 10 minutes
    Break the noodles into 3's or 4's and add to the water. Give it a stir.
    Add red and white beans, chickpeas and lentils.
    In a small pot heat half a cup of olive oil, add 1½ teaspoons of turmeric and 1½ teaspoons of dried mint, pour gently and slowly over the soup
    Lower the heat and boil for approximately 20 minutes.
    Combine 1½ tablespoons of flour into a small bowl with 2-3 tablespoons of water to form a paste, gradually add to the soup stirring continuously. Cook for a further 15-20 minutes.
    Meanwhile fry chopped onion and garlic with the remaining olive oil, add 1½ teaspoons of dried mint and ½ a teaspoon of turmeric to the onion mixture and pour over the soup
    Garnish option 1 - heat olive oil in a small pot, add dried mint and pour over your bowl of soup. Drizzle with natural yogurt and minced chilli
    Garnish option 2 - top with 1-2 tablespoons of natural yogurt and 1-2 teaspoons minced chilli
    Garnish option 3 - Drizzle of Balsamic Vinegar
