Hello, Welcome to my channel. My name is Jenilee. I am a wife, a homeschooling mom of 4 and a passionate homemaker. I am inspired by the skills of the past. And driven by our dream to make this a family farm, and a self sufficient home. Join me as I restore all the good, old, simple, and wholesome ways of homemaking. Growing our own food, sourcing whole foods from the farm, cooking from scratch, and all the simple but lovely skills (sewing, preserving, decorating) it takes to run a country home. My purpose is always to bring the focus back to the home and honor the people within the walls of my home. Nothing is more important to me than the work done within the walls of my home and more importantly for the people in it. I'm restoring Home, Family and Spirit.

Sweet Zucchini relish Recipe
Makes about 4 half pints
2 cups shredded zucchini
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 TBL salt
1 3/4 cup sugar
2 tsp celery seed
1 tsp mustard seed
1 cup vinegar
Combine all the veggie and cover with salt and cold water. Let sit for 2 hours.
drain and rinse. Add everything in a large pot and bring to a boil. Simmer for 10 minutes. Pack and process for 10 minutes in water bath.

Dehydrate zucchini shreds and store in jars for winter recipes…great in soups, casseroles and waffles. Powdered and add to smoothies. I use baking soda water to wash my veggies collecting it into a pan and then dilute and water plants with. My Mom always made chocolate zucchini cake and I like making it into bread for breakfast … Try using strips of zucchini as lasagna noodles…healthy and tasty
Zucchini gratin is simple but so good. Slice zucchini thin then layer in a casserole dish with a sprinkle of grated Parmesan and a splash of half and half or cream. Salt and pepper and repeat. Bake until tender and bubbly.
Your videos are so fun to watch. Regarding your yogurt you basically made "Labneh" which is very common in the Middle East. I make it all the time and turn it into a spread for sandwiches by adding some tomatoes and chives or arugula as a topping. 💕
Ever tried making stuffed squash? Would be similar to a stuffed green pepper recipe but can be stuffed in any way u like; squash can also be noodilized with the spiralizer
Though I don't often comment, I always love watching your channel and look forward to your posts! After work I sit down with a tasty meal and watch. The spiralizer is a nifty kitchen tool. In addition to zucchini, I also use it to spiralize sweet potatoes. Sauté them up in a little butter and sprinkle smoked paprika on top. Yum!

Beautiful video. I am drooling over those tomatoes. We are having stuffed zucchini here in a couple days. Going to hollow out some zucchini halves and stuff with chicken, black beans, and salsa and top with cheese. You could stuff them with all kinds of fillings.

You are a busy lady and I appreciate your content. Excess zucchini or any squash could be made into patties. 4 cups of squash or zucchini grated and 1 med onion grated with 1 egg,1 tablespoon of sugar and 1 cup each of self rising flour and self rising corn meal. Made patties and fry in your choice of oil .best in a cast iron skillet. Enjoy@

As always, love your video. What I do with excess zuchinis is to grate them, squeeze the excess water and freeze in small batches. Then I add some to my bolognese sauce, meatloaf, sheppard's pie. You'd never know it's in there and you get extra nutrition.
This is what I do also. Grate it and freeze it for soups and veggie spaghetti sauce. So yummy! 😋
