      @@MixingUpTiki Stephen remsberg. Even if he’s a Rum maniac like come on you’ll be able to nail a sour pretty quick with whatever Rum varietal you so see fit. Since it’s Coruba it’s a little more like what?

    One of the big problems is availability. I have settled on 4-5. I can't get anything Hamilton. But I use Plantation , Appleton, Goslings 151 or Plantation OFT. I have an Eldorado 3 I like to use in Mai tais . My drink of choice is the zombie and jet pilot. The cocktail you want to make most often really determines what you want to chase down.

      @@rperry70 absolutely! Even with just access to Plantation (Planteray) will be 95% there. The only thing you’d need to pick up after that would be an aged Demerara rum. Looks like you can get El Dorado, so the 8 year would work great for that. Planteray Xaymaca Planteray 3-Star Planteray Original Dark Planteray OFTD El Dorado 8 year There you go.

    Working up my own take on this classic, I like to start with a 2 oz. pour of a higher proof Bourbon - usually something like Wild Turkey 101, Early Times Bottled in Bond, etc.. The other day I used Green River Full Proof (117.3) so the flavor stands out more against the Passion Fruit. I use half an ounce of Passion Fruit pulp. To offset the lack of sweetness from not using a syrup or a liqueur of the PF, I up the Grenadine (homemade) to 3/4 oz. 1 oz. Lemon Juice finishes it off. Served over pebble or crushed ice, it's a fantastic full flavor tiki cocktail when I want to change up from something Rum. I managed to get a bottle of Rhum J.M Terroir Volcanique not that long ago. Thinking it will be an interesting riff to try out sometime.

      @@OgreSwamp Yes. You can adjust the amount of the gum Arabic to get different textures but yea, it’s that simple.

    Has anybody tried Rhum Barbancourt. I would think it would more fit the profile. It's 100% Sugar Cane Rhum aged in Oak 4 years. I used that when I couldn't find Martinique Rhum. I think you might be surprised.

    Thank you for another very informative comparison video. My go-to Falernum is Falernum #9. I find the John D. Taylor to be WAY overpowered towards clove. I''ll have to try the Tropical Standard recipe.

    AH - home at 2:01 "...tell me how to pronounce [ Arôme ]." First off...the word "Arôme" is French. Which makes sense because we're dealing with Martinique which is/was part of the French West Indies. When I've looked up and listened to pronunciations of the word, it comes across as: AH - home It is a two syllable word with the "a" being pronounced as "ah" and receiving the emphasis. The second part: "rôme" sounds like "home" as in the American word for house...and rhymes with: chrome, dome, roam, and gnome. The R sounds like an H and the O is long.

    If you want a richer syrup simply add twice as much sugar as almond milk for the final mix. FWIW, my go to orgeats are 2:1 rich syrups, those from Smugglers Cove and Latitude 29. Also interesting, a 2:1 syrup mixture is not twice as sweet as a 1:1 mixture, but rather approximately 1/3 sweeter when you actually measure the brix. Diffords Guide has a good chart comparing equivalent quantities of 1:1 vs 2:1 syrup.

    Just made this one with homemade falernum; liqueur not syrup. This has got to be the booziest tasting tiki drink I've ever made, but in a good way. It packs a huge punch which I thoroughly enjoy. It turned out quite dry (by tiki drink standards ofc) which isn't a bad thing since I like drier cocktails. Maybe a touch of simple syrup to replicate the falernum syrup would have been an interesting choice too.

    Shouldn't you use homemade orgeat instead of simple syrup and almond extract?

      Homemade Orgeat contains the fat from the almonds which would then separate and potentially curdle with the acids from the lime peels. Going syrup + extract allows us to control the level of almond flavor and prevents all of the above mentioned issues.

      Both are great. It’s a tough choice. I prefer higher ABV so gun to head I’d have to pick WP109 but you really can’t go wrong with either.

    Add a quarter of rock candy simple and use a milkshake blender to flash blend for 5 seconds. I PROMISE you it will be better

      Thanks so much for watching. Adding a 1/4oz of rock candy syrup is def more in line with the original 1944 mai tai, however the purpose of this video was to simplify the Mai tai as much as possible. And a spindle blender is def most common in most households.

    excellent lineup and category breakdown.....aged demerara often overlooked as a distinct category, but very necessary for specific tiki/caribbean cocktails, and an overproof is essential for the heavy-hitters... wanna get fancy add a french agricole rum but really five types is all you need to start out.

    Very interesting history lesson here. I've made my Three Dots with a split base of demerara/dark Jamaican for a while now and always thought they just mixed much better with the heavy spice component of the drink. Glad to see my instincts were right.

      It’s left over On the Rocks RTD Mai Tai bottle. But I recommend Crew bottles. They’re great.

    I'm sure it's good, but I can never ever stop with fresh citrus. I have a lime a lemon. and a grapefruit tree in my yard. Just one of the old school dinosaurs. Really enjoy your videos.

      @@MixingUpTiki haha that's fair. It is really good. I made a homemade falernum a few months ago and hated it, so I was glad to find I liked yours bc I can't get commercial brands here. I did have to substitute the Tiki White rum tho, can't get it, so I used a 50/50 blend of Wray & Nephew and Havana Club 3 Year. I think it worked pretty well. Might experiment next time splitting the HC with Mount Gay Eclipse to get some of that age in there. Thanks again for the reply tho!

    Very nice comparison. I’ve tried a number of rums and blends and my favorite to date is 50/50 Pusser’s gunpowder proof and Appleton 12 year. My orange liquor is 50/50 grand Marnier and Clement creole shrubb.

      Not 100% sure on the cup conversion. I always use a scale as it’s WAYYYY more accurate.

    3 dot is on of my favorite cocktails. Years ago I came to the same conclusion about the Martinique rhum not balancing well in this cocktail so I use 1 oz Demerara and 1 oz Martinique
