Elevating the Chief Lapu Lapu with Magellan’s Requiem

  • Recently I posted on Threads that I think Passionfruit syrup is overrated, that it overpowers cocktails. I got a little flack for it. A lot of people seem to disagree. So I figured I’d make a cocktail that has a full ounce of Passionfruit syrup. Then I wanted to demonstrate how we can keep that flavor but balance it. We’ll take the same flavors of the original 1950’s cocktail, Jamaican rum, Passionfruit, orange, and lemon and reimagine them as a more balanced elegant modern cocktail.

    Just to have the opportunity to serve a Tiki drink in a Nick & Nora (the GREATEST cocktail glass ever) makes the complexity of producing your own passionfruit gardenia mix worth it.
    I'm still a total newb to Tiki and Chief Lapu Lapu has been climbing up my "next Tiki drink to make list" faster than any other, but by the end of the summer I'll be ready for Magellan's requiem. Amazing Tiki episode - THANKS!!

    This Gardenia Mix w/210s reminds me of Make and Drink's Pearl Diver Punch and, I'm glad to read, gives me a fridge life for the thing. I love the fact that you also provide alternative uses for it.
    On another note, I fully agree on the Chief Lapu Lapu being unbalanced to my palate, but I truly need to try this Magellan's Requiem out! Interesting looking riff!

      You’re welcome. I know for me, I have no problem creating new ingredients, but I hate when I create something to only use it in one cocktail. So I wanted to provide some other options.

      @@MixingUpTiki completely agree! Heck, I started using Gardenia Mix on pancakes by the end of my last batch!.. Which I'm unsure passionfruit would work with. 😂

    I usually double the rum and don’t use the simple in the traditional recipe. Need to try the interpretation 😋 😊

    I replace the lightly aged rum with Tanduay and use calamansi juice instead of lemon to have something that better represents the cocktail's namesake. And it's been my experience that Filipinos love their drinks on the sweet side.

    As a Filipino, I tried this drink before but with a bit different recipe.
    Also, Magellan is commanding Spanish forces not Portuguese.

      ​@MixingUpTiki almost the same with the original recipe but more spirit and the orange juice is acid-adjusted.

    Great interpretation, love the Passion fruit gardenia syrup. Were you the one who recommended the frozen passion fruit cubes from Whole Foods? The name of the cocktail is outstanding!

      @@MixingUpTiki Yes please. Apologies if I missed it in a previous video. Sounds like many fruits can be put in a bag with sugar (strawberry, raspberry, watermelon), while others can be just blended/strained (pineapple). I would think that sugar is best added in a syrup where you can control the sweetness level better, but would still love the recipe.

      @@robmichaels4728 this is my current Passionfruit syrup recipe:
      Yield 8oz
      BRIX 50%
      Ingredients:
      112g Passionfruit Purée
      64.8g Water
      110.4g Sugar
      Combine all ingredients into a blender cup. Blend on high until all the ingredients have incorporated and the sugar has dissolved. Strain into a sanitized bottle.

    I can't find Courba Dark in Europe (Sweden/Germany) were I live. Do you have a suggestions of a suitable substitute?

      Myers, Appleton Signature, or Plantation Xaymaca will all work.

      Thanks! I have 2 of them so I can try what I like the best.I just bought the book '''Tropical Standard" thanks to your recommendations, truly a great book. Reading it made me realise I also need a substitute for the Standard Coruba, what do you recommend?

      @@hakanvikstrom4502 the only Coruba that’s called for in Tropical Standard is Coruba Dark. As I mentioned Myers is the closest off the shelf replacement for it.

      @@MixingUpTiki Great, thanks for your help, since you are so kind and replying I might as well ask about 2 more rums, Two James Dr Bird and Denizen Merchant reserve, those are't available here either so a substitute is needed. What du you suggest?

      For Doctor Bird your best bet is Smith & Cross.
      Unfortunately Merchant Reserve is pretty unique. Your best bet is something like 3 parts Appleton 8 + 1 part aged Rhum Agricole like Clement VSOP or Rhum JM Gold.

    So I think lots of drinks were made for people like my wife sweeter and less alcohol taste, you could have more without the thinking you are getting drunk. Just like if you drink amaretto after a few drinks you don't feel tipsy but you are.
