CHICKEN SKEWERS | SHISH TAWOOK (TAOUK)

INGREDIENTS
- 2 lbs chicken
- 1 large red onion
- 2 cups greek yogurt
- 2 tbsp. Baharat spice blend (see below)
- 1 lemon, zest + juice (plus additional to finish)
- 5 cloves garlic, grated
- Salt & Pepper to taste
- 2 tsp. Honey
- ½ tsp. Sumac for garnish
BAHARAT SPICE BLEND
- 1 pod cardamom, ground
- 3 cloves, ground
- 1 tbsp. Cumin
- 1 tsp. All spice
- 1 tsp. Nutmeg
- 1 tsp. coriander
- ¼ tsp. Turmeric (for color)
OVEN VERSION
- Drizzle 2 tbsp. olive oil and bake covered at 325°F for 25 minutes then broil on high for 2 minutes on each side.

Thank you so much for sharing this recipe! My Great Grandmother used to make this but she was the kind of cook who did everything by memory or by "feeling" what amounts were right verses writing anything down. We have lost several of the recipes we used to count on for gatherings, but this gave us a very close starting point!

This is Armenia recipe my relatives from Adana make it. It’s not Turkish. So it’s from the region were the Turks took it by force after committing Genecide.
Ok so how come no curing salt?
Curing salt (aka: pink curing salt, Prague powder, insta cure, tender quick) is unnecessary in this application. I use it when I make corned beef and pastrami to get the specific texture, color, and flavor that I want in those products. Koshering/sea salt works just fine for this and is more historically accurate as well. Some people don't like using sodium nitrate/nitrite as they are toxic if not fully converted to sodium oxide by time.

The roses you showed were actually tea roses. Not Damascus which is a very thorny rose and only a few petals on the flowers.
