Hi everyone! I’m Margaret Lewis I share videos of my passion in culinary arts. Also what I’ve learned been in the kitchen with my mom, aunts and grandmother of our Belizean food. As I enjoy cooking and food prep. My sister has been joining me in the kitchen sharing her passions with us and making memories of time spent with all the ladies in our family. Teriyaki Shrimp and Broccoli
Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with me. Today I will be making my teriyaki Shrimp and broccoli. It will be served with jasmine rice any white rice will do.
Ingredients:
Stir Fry
1 tablespoon Vegetable and/ coconut oil
3 Garlic Cloves finely chopped
1 Whole head Broccoli cut into florets
1 cup Mixed Vegetables mushrooms, bell peppers etc.
1 2lb bag Shrimp deveined and cleaned
2 tablespoons grated fresh ginger or paste
1 1/2 tablespoons of chicken bouillon seasoning
1 tablespoon cornstarch if needed
Salt to taste
Roasted sesame seeds for garnish
Shrimps Seasoning (optional)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon ground red pepper flakes (optional)
Pinch of salt
Instructions:
1. Mix together all the ingredients under sauce and set aside.
2. In a medium bowl season clean shrimp
3. Heat half the oil in a wok or pan
4. I pre cook my shrimp this is optional because shrimp cooks very quickly.
5. or just start at the next step
6. Add the chopped garlic. Saute for a minute and add shrimp. Stir fry the shrimp on high heat for 2-3 minutes till it starts turning pink. Add the broccoli and vegetables and stir fry again for 2-3 minutes.
7. Once the shrimp is cooked through and the veggies start looking bright, add the sauce and keep stirring till it comes to a boil. Add a little more water if the sauce is too thick. Simmer for a minute or two. Check for seasoning and add salt if required. Stir well and switch off the flame.
Homemade Teriyaki Sauce
Ingredients:
1/3 cup red wine (I used port)
1/3 cup cooking oil
1 teaspoon ground ginger
2 teaspoons minced garlic
1/8 teaspoon dry mustard powder or 1 teaspoon yellow mustard
Dash lemon juice
Sesame seeds for garnish
Optional:
1 tablespoon cornstarch
2 tablespoons brown sugar
Instructions:
1. Combine all ingredients in a bowl, except optional ingredients, unless you choose to use them.
2. Pour over chicken, beef, shrimp, vegetables, or your protein of choice.
3. Marinade for approximately 3 hours, depending on the type of protein.
4. Use the remaining sauce for basting.
Optional:
1. If using optional ingredients, cook the sauce, bring to a short roaring boil until the sauce thickens.
2. Cool the sauce to room temperature and continue from # 2 above.

I love your humor and warmth. But I have serious concerns about two things. Not placing your hot jars on a towel to insulate the bottom. Then putting jars on top of other jars would hamper the sealing process. Canned food shouldn’t be stacked. Not right after. Not while storing.

Why add sugar ? I just made yummy yoghurt with Pinehill evaporated milk (Barbados) without added sugar but with a few additional scoops of powdered milk. It tastes like a cream dessert. There are too many non communicable diseases because of excess sugar, especially in the Caribbean. You may want to give it a try…
If you leave out the sugar and used half the water would you get evaporated milk?
I make powdered milk double strength to use in recipes calling for evaporated milk. Works great, been doing it for years.

You shouldn't pressure can rice and peas. The rice will be too soft. You can pressure can the beans separately. But not together.

Why pickle sausages they’re already cooked.
It away to preserve them longer. They freezer burn after so long in the freezer. And home canning them is a very smart ideal. I also home can hot dogs for my grandchildren. And you really don't have to add any liquid, but using wide mouth canning jars is a must for me to can hot dogs. You can even mix sliced hot dogs and pork n beans. So many things you can put with hot dogs and home can.
The hot dogs are being pressure canned/preserved for shelf stable cooked food to make room in the freezer. No pickling going on here.

Just add a few drops of your favorite hot sauce to the low sodium broth that you are using. Add the Spice to your taste... enjoy. Thanks for trying it.

Have you tried adding the boiling water first, than add the ingredients, I think it would be much easier to mix. It works for me when I make my smoothies, even frozen fruit with ice mixes better adding the liquid first.
