Homemade Hot Sauce

  • Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with us. Today my sister will be preparing one of her hot sauce original and extra hot.
    Ingredients:
    2 lbs Hot peppers whole (without seeds optional)
    1 lb chayote squash diced and steamed (optional)
    1 lb carrots diced and steamed
    1 1/2 lb yellow onions (quartered)
    1 1/2 bottles plain yellow mustard
    2 cups white distilled vinegar
    2 cups cider vinegar
    Salt & pepper to taste
    Instructions:
    1. Wash all peppers and dry them with a towel. Use different peppers to make different hot sauces with different heat levels.
    2. Divide all ingredients into 4 quarters
    3. Add 1/4 of the amount of peppers and 1/4 of the remaining ingredients, (EXCEPT the mustard, salt & pepper), to a blender and blend until liquefied.
    4. Pour into a thick pot.
    5. Blend remaining ingredients in quarter measures. DO NOT OVER STUFF THE BLENDER so that the ingredients blend well.
    6. Pour onto thick pot.
    7. After all the pepper solution is in the pot, add mustard, salt and pepper to the pot and stir well.
    8. Taste for salt content.
    9. Simmer slowly and stir frequently with a regular spoon.
    10. Taste and slightly adjust salt.
    11. While sauce is still hot, pour into clean, steamed mason jars and tighten slightly.
    12. Steam filled jars for 35 minutes in a pot that has a rack in the bottom.
    13. Remove jars from steamer pot and let sit on cooling rack until cool.
    14. After, hot sauce cools, the flavors will bloom and taste better with age. Enjoy.
    Makes six 16 ounce jars.
