Stew Oxtails Instant Pot

  • Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with us. Today I will be preparing stew oxtail and serving it with yellow rice and sautéed cabbage.
    Ingredients:
    4 lbs oxtail
    2 tablespoons Worcestershire sauce
    2 tablespoons curry powder
    1 tsp dried thyme (4 sprigs thyme)
    1 tbsp ground oregano
    2 tbsps garlic powder
    2 tbsps onion powder
    2 tbsps beef base powder
    1 tbsp black pepper
    1 tbsp ground red pepper flakes
    1 medium onion chopped
    1 medium green bell pepper chopped
    1 habanero pepper
    3 garlic cloves chopped finely
    1 large carrot sliced (we use our dehydrated carrots)
    2 stalks celery (we use our dehydrated celery)
    2-3 tablespoon beef bouillon seasoning
    2 tablespoon browning sauce only use this amount if using (homemade)
    4 tablespoon vegetable oil (coconut oil)
    3 cups beef stock/water (must be hot)
    2 tablespoon tomato paste
    1 cup dried butter beans or use 1 15oz can, drained (we used 1 cp of our canned white beans)
    salt if needed
    To make the slurry
    2 tablespoon cornstarch/tapioca starch
    2 tablespoon warm water
    Instructions:
    1. Wash the oxtail
    2. Place the oxtail in a bowl, then add Worcestershire sauce, curry powder, dried thyme (4 sprigs thyme), ground oregano, garlic powder, onion powder, beef base powder, black pepper, ground red pepper flakes. Use your hands to rub the marinade into the meat.
    3. Refrigerate overnight or for at least 3 hours
    Cooking
    1. Heat up Instant Pot using "Sauté
    2. Add oil bring to medium heat
    3. Add in onions, bell peppers add a pinch of salt then saute for 2 mins. Add in chopped garlic cloves, then saute for another minute. Add tomato paste, a pinch of dried oregano and dried thyme. Saute for another 3 mins.
    4. Remove 1/2 the onion mixture set aside to add to the top of the oxtail.
    5. Add oxtails into pot
    6. Add marinade and browning sauce in Instant Pot. Ensure they are partially submerged in the liquid. Then, layer of onions mixture on top.
    7. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Press meat/stew pressure for 45 minutes and natural release.
    8. After release then open the lid carefully.
    9. Taste and season with more salt & black pepper if necessary.
    10. Add beans if you are using canned remember to rinse before adding to the stew. I used one of the beans my sister had canned.
    11. Then press sauté. Bring to a boil.
    12. Mix starch and water together, then add the slurry 30 minutes prior to finishing.
