Our family has 9 decades of cooking experience, which began with our great-grandfather Mohammed Rashid in the 1930s - cooking at community events in a tiny village in North-East Pakistan. His food became legendary and was influenced by traditional Pakistani dishes such as Biriani, Jhelum and Handi.
Our grandfather Mirza Rashid moved the business to Nakodar and set up a bustling local restaurant. In 1969, our father Mohammad Rashid brought our family passion to the UK. in 2001, we took over the business and transformed it into The Balti House, an award-winning restaurant in Rishton.

🍛 What is a Tarka Dal
Tarka Dal is a delicious red lentil curry, which is popular throughout the Indian subcontinent. The word ‘Tarka’ means a way of frying your spices. Dal is basically a thick lentil soup. So you pour your Tarka into your Dal and you get a tasty Tarka Dal. And this one is even more tasty, because it’s grandma’s special recipe!
🔥 Is it spicy?
A Tarka Dal isn’t too spicy, but if you do find it too spicy you can always add more water to cool it down a little. Whilst the Tarka may seem like it’s going to be spicy, the Dal will cool it down.
🛒 Ingredients
- 1 cup of red lentils
- 1 teaspoon of salt
- ¼ teaspoon of turmeric
- ½ onion
- 8 cloves of garlic
- ⅓ stick of butter
- ½ tomato
- 1 green chilli
- 1 teaspoon of red chilli powder
- 1 teaspoon of corriander powder
- 1 teaspoon of fenugreek leaves
- 1 teaspoon of cumin powder
📖 Recipe
1) Pre-soak 1 cup of red lentils for 1-2 hours.
2) Boil 4 cups of water and add the lentils, 1 teaspoon of salt and ¼ teaspoon of turmeric.
3) Leave the lentils on a medium to low heat for 20-25 minutes to make the Dal.
4) Take it off the heat and start making the Tarka.
5) Finely dice ½ an onion, 8 cloves of garlic, slice 1 green chilli and chop ½ a medium tomato..
6) Add ⅓ stick of butter to a pan and heat it up on a medium to low heat.
7) Add the diced garlic into a pan and fry it until lightly golden.
8) Add the onion and green chilli into the pan.
9) Next, add the ½ tomato into the pan.
10) Time to add the spices! Add 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of fenugreek leaves and 1 teaspoon of cumin powder.
11) Give it all a good stir in.
12) Pour in ¼ cup of water.
13) Add some fresh coriander to the Tarka.
14) Pour the Tarka into the Dal.
15) Stir it in and leave to cook on medium to low heat for a few minutes.
16) Add in another cup of water if it needs thinning.

wow! what a missed opportunity. You had an amazing saute pan full of flavor from the tarka after having transferred the bulk to the Dal that you SHOULD have deglazed (with vegetable stock) and then used that to thin out your Dal thereafter. Otherwise, excellent.

First marinade of the chicken consists of garlic ginger paste and lemon then on to the second marinade, also mace with garlic and tomatos cook down and blend, the sauce should be silky smooth,this is the way I have been taught how to do it and no onions in the dish at all.
3 table spoons of red chilli powder is volcano level spice !!
Not a genuine Balti, to be a proper Balti it should be cooked and served in a proper thin steel Balti bowl !!

Every recipe for tarka dhal I’ve come across is slightly different, including this one. It looks fantastic!
