Andreas takes us to the port town of Skien in Eastern Norway, which is the hometown of Norway's most important playwright, Henrik Ibsen. To honor this, Andreas makes herring salad and a dessert made with buttermilk. For the main course, he prepares a tasty dish of wild duck cooked over an open fire and served with seasonal vegetables. The best shrimp salad, which would be perfect within the Norwegian diet, is the shrimp / watercress salad. The shrimp complements the watercress perfectly. Ingredients: baby shrimp, watercress, oil, vinegar, salt, pepper, garlic, thinly shaved onions. Bon appetite.

The best cooking show on tv.
I love cod. But lutefisk, no. We had it every holiday season. The only way I could eat it was smothered in a very thick white cream sauce with about a half or maybe 1 teaspoon of the lutefisk. It was just a little lump in the cream sauce then. My Scandinavian parents said I'd like it as I got older. No.

I have a recipe book sitting on a tray next to where I eat breakfast most days. It's called 'Scandinavian Cooking', by Tina Nordstrom .Very nice book I checked out of a local library. And now it's in my Amazon cart. Very interesting video. I might be partial since I'm completely Scandinavian ancestry.

I love fish…I mean I really love fish and can’t eat it everyday, but it has to be cooked for me. Even if it’s cooked ceviche style (Ceviche is a seafood dish where diced cubes of raw fish, marinated in a lemon or lime juice mixture), I prefer it cooked at least lightly the traditional way: steamed, grilled, boiled, sautéed, stewed, etc.
My fondest dream would be to be able to afford a lighthouse and live there.
