Big fan here!! Quick note, at least in America, when it comes to cooking wild game, the term "gamey" is not positive. It is typically used to describe an off and unpleasant flavor that may be the result of poor butchering and processing techniques (ie. leaving the tallow on a piece of venison). Instead, one might say it tastes "wild" or even "earthy". Also, we cook that way up north with snowmobiles by setting food on the exhaust pipe! :)
I would say that has to do with the fact that gamey meat itself tastes very different from domesticated animals. Wild animals have lower body fat percentages and have higher myoglobin(reason for the darker red color in the meat). Lamb too is often described as being gamey, although I'm still unsure why they would taste different. One of the best game meats I've had would be described as a sweet liver taste, which is why organ meat is also described as gamey. I think it has to do with the increased minerals, vitamins, and myoglobin that gives a gamey taste.
How beautiful is Norway, i will love to come and visit in the near future, the food also looks so delicious,i love herrings and Mackerel, and where I'm from we eat bacalao, thanks for sharing so much with us, love listening and learning so much from your videos, now all i need is learn Norwegian❤
