Make the bacon jam by frying bacon, then cooking onions with garlic, spices, and BBQ glaze. Store in the fridge until needed.
Preheat the Recteq Smoke Stone Griddle to 350°F and grill burger patties, seasoning with SPG.
Toast brioche buns with Duke’s Mayo, then grill eggs in egg molds.
Assemble the burger by layering cheese-topped patties, fried eggs, and a generous amount of bacon jam.

Ingredients:
For the Burger:
- Ground Hamburger Meat
- Elite BBQ Smokers SPG (Salt, Pepper, Garlic)
- Eggs
- Brioche Buns
- Butter
- Bacon Up (or other bacon fat)
- Duke's Mayonnaise
For the Bacon Jam:
- 22 oz Applewood Bacon, diced
- 1 Onion, diced
- 4 Cloves Garlic, minced
- 1 tbsp Chili Powder
- 1 tbsp Smoked Paprika
- 1/2 tbsp Salt
- 1/2 tbsp Ground Black Pepper
- 1/2 cup Brown Sugar
- 1/4 cup Maple Syrup
- 1/4 cup Heath Riles BBQ Glaze (Brown Sugar Honey Habanero)
- 1/4 cup Kings BBQ Sweet and Smokey Sauce
- 3 tbsp Sriracha Sauce
- 1/4 cup Apple Cider Vinegar
Directions:
For the Bacon Jam:
Step 1 - Fry the diced bacon in a skillet over medium heat until the fat is rendered and the bacon is crispy.
Step 2 - Remove the bacon from the pan and drain the bacon grease, keeping enough in the pan to cook the onions (about 2-3 tablespoons).
Step 3 - Add the diced onions to the skillet with the bacon grease and sauté until browned.
Step 4 - Stir in the minced garlic, chili powder, smoked paprika, salt, and pepper. Mix thoroughly and cook for 1-2 minutes until fragrant.
Step 5 - Add the brown sugar, maple syrup, BBQ glaze, BBQ sauce, apple cider vinegar, and Sriracha. Simmer over medium-low heat for about 5 minutes to allow the flavors to blend.
Step 6 - Stir the cooked bacon back into the mixture and cook for an additional 3-5 minutes until the jam thickens slightly.
Step 7 - Transfer the bacon jam to mason jars and store in the refrigerator until ready to use.

Bacon jam is so good, Jason! I like bacon Bourbon jam, too! That burger is making my mouth water, and when I know we'll be making juicy burgers, I add mayonnaise to my bottom bun, then toast. 😋😋😋

That's my dad. He was coming up in the pro-stock circuit. Last race of the season, he was coming into the final turn when a driver named Kenny Linder tapped his bumper and put him into the wall at a hundred and twenty miles an hour. I have an OG full-sized Weber kettle that I rescued after it was abandoned outside a mini storage unit. It was in great shape and I've cooked a bunch of stuff on it. Watching your video, though, I realized something about it that I never paid attention to before...the little piece of metal attached to the underside of the lid that allows you to hang the lid on the side of the grill. Huge Weber fan - have that grill and a Smokey Joe I found abandoned in the mountains. I guess I'm a Weber kettle whisperer or something. Anyway, thank you Jason for your content. You're fantastic.
