First time here and those pinwheels look crazy delicious....I was trying to understand why you said the bite was a bit chewy seeing that you against the grain. The only thing I would of done differently was give it a quick sear all around then finish it indirect until you reached your desired temperature.... although some say when cooking skirt steak instead of cooking it to medium rare go to more medium and you'll get a better bite. Now I'm only saying this because of all the videos I've watched and bbq channel that I follow because I live in Trinidad & Tobago and skirt Steaks cuts are not readily available in the groceries here. Mighty Fine! I would live to try it with whole beef tenderloin (2 years ago, I found some whole, trimmed one's at WinCo, about 4 1/2 lbs each at $ 7.98 per pound. I bought 6 and was a very popular person for 6 months!). I'll be at Winco again this week and fingers crossed that I can find a similar deal, even $11/lb would be fantastic. Great show Bud.
