How To Make an Excellent Curry Sauce
This curry sauce is excellent for all types of curry - be it meat or vegetable! Basically an All-purpose Curry Sauce!
This keeps well in the fridge for around two weeks, and freezes well for future use. It's super handy and I usually have a container or two in my freezer.
Ingredients:-
8 medium sized onions
2 heads of garlic
4 sticks of lemon grass(take off outside leaves and use the white part of the stalk)
8 -10 candlenuts
~1/3 inch from belacan block
120 g curry powder(I use Malaysian), mixed to a paste with 2 cups water.
2 cups cooking oil (I used rice bran oil)
Method:-
1. Peel onions and garlic.
2. Roughly chop onions, garlic, candlenuts, lemongrass and belacan.
3. Mix to a paste in a blender, adding a little water to help.
4. Heat the oil in a wok over a medium heat and add the paste stirring well. Blend in and cook for ~10 minutes continuing to stir so it doesn't stick.
5. Add curry paste, rinsing the bowl with an extra cup of water to get it all. and continue stirring and cooking for ~20 minutes, until the oil turns a beautiful red and the sauce is fragrant.
This sauce can be used immediately or stored in containers in the fridge for about two weeks. It also freezes very well.

I love zesty fried chicken. Would half a packet of Good Seasons Italian dressing powder mixed into this better work well for fried chicken? Or maybe half a packet? I also love the zest of ranch dressing, would a ranch packet also work or would it overwhelm the batter?

Vinegar will enhance the flavor of the fish. Just try it. Add like 2 tablespoon when seasoning your fish

The recipe works, but its too much effort for the results. Real Fish and Chipperies just use flour and water. And if they desire "crunch", they mix in corn starch, half and half. For more crunch, add more starch, for less, add LESS cornstarch. Its as simple as that.

I figured this has to be in the UK since you're not using any seasonings. You need to Try some fish matter from the Southeastern section of the United States. Food is about flavor. We got flavor.

The batter is really good, need more seasoning
Totally backwards. You're better off to mix the dry ingredients together, then gradually ADD THEM TO THE WATER until you reach the right consistency. You want a light airy coating. By mixing up a flour dough before you make it into a batter, you only create longer gluten strands, resulting in a heavy, doughy coating. You could also add a couple of tablespoons of corn/potato starch to the dry ingredients to make your batter crispier.
