Your recipes sound good but I basically watched because I just got an electric canner and need to know more about how to use it successfully. My question to you is why do you heat your jars when you are raw packing meat and have all room temp ingredients (except your broth which is being poured onto cold food in the jars)? Your presentation was nice and very watchable, so thank you for that. Many Blessings to you!

How is it not safe to can 1 jar ?
Good question. It’s difficult for pressure canners to ensure proper heat penetration when there’s so much empty space in the canner.

Merry Christmas Marta! 🎄 The toffee looks good. I was going to make dried orange slices in my dehydrator but I forgot. Maybe next year as I have all my preserving supplies put away for the year. I’m having fun baking traditional German cookies and Stollen. 😊
Merry Christmas to you, too! I bet the orange slices dry out a lot faster in the dehydrator. I didn't mind that they took a while, though--the house smelled great. I made some German cookies last year (springerle) but it's such a long process. Wishing you a happy new year :)

So..... I'm pretty sure one (or more) jars are compromised bc the canning water in the pot has a red tint. BUT all the jars are sealed. Are they good?
Sorry for the late response. Yes, they're good! A little siphoning (liquid seeping out of the jars) is fairly common. As long as your jars still have more than half their liquid and they've sealed, everything is safe. Congrats...you did it :)

does anyone add the liquid first so that when you add the solid ingredients you don’t have to worry about air bubbles?
Good question. In a later video, I tried adding a bit of broth to the bottom, and it did help reduce the air bubbles. I have one hesitation when it comes to adding all the broth first: Because this is a raw pack recipe, the broth is the only hot thing that goes into the jar. If it's added first, I wonder if the jar might be too cool when it goes into the canner and might be susceptible to thermal shock. I'm always open to experimentation, though. If you give it a try, let me know :)

Cannin kills all the vitamins in the product. Freeze, then dehydrate those fresh raw berries, when they are crushed between fingers, put in nutribullet , powder, place in jar with a moisture absorber so it doesn’t cake from moisture. Take 8oz of hot water, teaspoon of powder , and enjoy like your bladder and kidneys will….lolol. It’s great for uti and kidney bladder issues. Turned my Dr on to it.
Canning does reduce the nutrients in food, but canned foods still have nutritional value. Vitamin C is most dramatically affected, and is estimated to be reduced by about 50%. That cranberry powder you describe sounds like a convenient pantry item, though. It would be nice to add to yogurt and smoothies. Thanks for sharing!
The E in the E10 step means exhaust. Is a step that's intended to evacuate the air inside the canner and replace it with steam. Contrary to what is stated in the video and some of the comments, this step has nothing to do with building pressure. The manual also mentions not to put hot water in the canner when adding the jars. This canner has very specific prohramming that it follows. The canner needs to heat the water so that it understands at what temperature it can start the 10-minute exhaust countdown. This needs to be precise, because, as opposed to a traditional stovetop canner where the user visually verifies a steady stream of steam through the exhaust port and then begins a countdown, the NESCO canner is strictly using temperature and elapsed time. This canner does not begin to build true pressure until after the pressure limiting valve is moved from exhaust to airtight. The canner will then begin to build pressure, and when the desired pressure / temperature is achieved, the canning countdown will begin. It is a little bit of splitting hairs, but, although these digital canners have made the process much easier and user friendly, it's still very important to understand the process, so that mistakes are not made.

Thanks for sharing both projects! I’m with you with sugar causing headaches now. It’s very frustrating but a good motivator to cut it out or down anyway. Will make an exception for this juice! I like having some unsweetened on hand for urinary infections so will be trying that too.

I made this last year and opened a jar this week. Oh my goodness! I strained the cranberry and squeezed out the juice from the berries. This is a thicker juice than I expected. I loved it! My family can’t get enough of cranberry sauce (it’s more like a jam that they spread on bread). I used 1/4 c sugar for the juice. I don’t drink juice or soda but it’s great for potential UTI’s or just for a change of pace.

All for rebel canning but if you're following "safe canning" procedures shouldn't you get the water boiling WITH the jars in it before starting the process time?
That’s a common method for heating jars, but however you heat the jars is fine. Making sure jars are hot when they’re filled isn’t a matter of safety-it’s just a practice that prevents thermal shock that can cause jars to break.
Sorry, I just realized I misread your comment. Yes, my water was boiling when I lowered the jars in and it maintained the boil.

The glass bowl is called a brandy snifter. My mom had one when I was growing up. She decorated it for the holidays too. Hadn't thought about that in years, brings back fond memories. Not sure what happened to it but with 4 kids in the house my guess is it got broke🤦♀
Ha, I grew up in a family of 4 kids-it sounds very likely that it broke 😬. I had no idea it’s a brandy snifter. Good to know! I love finding these little treasures at thrift stores.
