Great tradition ! I do it as well, not at such large scale though, but manage about 15gal total. I make a hybrid type chunky sort of chunky stewed marinara without any spices, just salt and finely diced onion. That way I can easily take it in any direction from the jar, sphaghetti sauce just hit it with a immersion blender add italian spices and simmer. Make salsa directly from it, and its still chunky enough to use for diced tomatoes. Strain it for tomato juice. Etc. Great work !
That sounds really versatile! I’ve been wondering if I should try something like that, because I’m just never sure how much of each tomato product I need.
