    Great tradition ! I do it as well, not at such large scale though, but manage about 15gal total.
    I make a hybrid type chunky sort of chunky stewed marinara without any spices, just salt and finely diced onion. That way I can easily take it in any direction from the jar, sphaghetti sauce just hit it with a immersion blender add italian spices and simmer. Make salsa directly from it, and its still chunky enough to use for diced tomatoes. Strain it for tomato juice. Etc.

      That sounds really versatile! I’ve been wondering if I should try something like that, because I’m just never sure how much of each tomato product I need.

    How I am not related to you, I do not understand. 😊. I do this alone. Everyone reminds me the grocery store sells tomatoes, then asks for salsa for Christmas!
