I don't recall most of them being common in the 70-s or even heard of them. One I do not see anymore on menus is hot roast beef sandwiches smothered in gravy So delicious, I recall everything beingI quiche back then and fondue and bean sprouts on everything

Not only dandylion salad, but wine that wasn't something to whine about. My Mom made nasturtium salad also. Radish made soups spicy too. Woo Hoo. Btw, there are still folks who must eat these kinds of foods. Many in our USA culture despise the poor, needy, disabled, and disenfranchised. Cornbread was topped with whatever "meat sauce/chili" could be assembled, and then for dessert we'd split the cornbread and spread corn syrup, honey, or cheap "maple" pancake syrup. Hmmmm.

My dad grew up in the great depression. When I was growing up, we ate about 95% of these dishes and I serve them to my family now too. Ham and cabbage was another classic - instead of corned beef, it was ham. The 'pot liquor' was amazing and if there was any leftover it went into bean or pea soup the next day. Well done video, I truly enjoyed it and you kept my attention through the entire thing!

My grandma grew up during the great depression. Her family owned a farm so they made it through with enough food, but still had to stretch it sometimes, especially in the winter. Every week of her life, until her mid 80s at least, she made a ham for sunday dinner at church and then monday used the ham bone to make ham and beans. Just great northern beans/butter beans, an onion, a bay leaf, the ham bone, and water. She loved ham and beans.
