    No. Catfish ain’t coated with corn “starch.” It’s coated with corn “meal.”

    Cornbread and collard greens are another very real dish. But just like chicken and dumplings, they’ve been around over a century.

    Brunswick stew is very real. But by the ‘70s it had already all but disappeared. And simmering doesn’t add any “smokiness.”

      It hasn’t disappeared in North Alabama. You can get it by the gallon at all of our Barbecue restaurants.

      @ yeah, it’s been kinda making a comeback since the mid 90s. But in the 70s it was scarce.

    You don't beat buscuit dough!!!!!!! Chicken and Dumplings have been around for more than a century!!!!! Dude, I' m just gonna turn off the volume and watch!

    Het Sam! I've noticed lately that you are trying to censor what you are saying. I know youtube has their stupid rules but when it comes to everyone else complaining, fuck them. You do what you do (except maybe your wife and grandbabies) and if they get offended because you say abad word it's on them not you. Besides I've never known a cook to not cuss like a drunken sailor, including me when I could work. Just keep going being yourself. You are a fabulous cook and you have given so many ideas, especially at 2 am LOL Keep cooking!

    Chicken and dumplings are very real. But they didn’t originate in the ‘70s. They originated early in the 20th century. And those big lumpy dough balls ain’t real dumplings. Real dumplings are flat.

      There are more than one kind of dumplings. Some are rolled our flat and some are big balls. They are both real dumplings.

      @ they’re not real “Southern” dumplings. Those dough balls are Yankee dumplings at best.

      I agree, dumplins are flat. Pie is round and cornbread can be any shape because it’s cornbread.

    Why don't you include pictures of Black women in your stories as well? After all, many of us have eaten or know about these foods.

    We didn’t eat chicken and biscuits in the 70s. We sold that garbage to gullible tourists. And this pop open tubes of biscuits are what we ate ever since the early 1950s.
