What do you mean by forgotten pasta dishes? No way . I don't like Carbonara but the rest I do. Incidentally , you nearly lost me during Julia Roberts' vile eating of spaghetti.. found it physically repellent.
How did this morph from pasta dishes to casseroles? A one hour video every day is a little much also. And what you need to know about enchiladas is that they're made with corn tortillas. That enchilada casserole you show is in all actuality Smothered Burritos, those being made with flour tortillas. I live in the southwest. Burritos are made with flour tortillas. Tacos and enchiladas are made with corn tortillas. White don't make you right. You should know a little bit about Hispanic food and cooking before you call something what it isn't.
Many of the pastas mentioned have not been forgotten. Many of them are still eaten in Germany today. I don't want to talk about Italy first. 😁
