I do not know if you could swing it financially but it would be awesome if you could use all you expertise and help create a route for trails that are not yet completed and video the route as you make it. The Cape to Cape trail in Nova Scotia would be great one to tackle in spring or fall. Your experience would bring such an asset.
A suggestion that will be expensive: through-hike one or more of the European long distance trails. Probably with more footage from the 'civilized world', since Europe is not so dense with wilderness as the US.

There are so many good trails out there. The GR20 could be another one to try.

I lived in New Zealand in 2012-13. I'd love to go back. I thoroughly enjoyed the hiking that I got to do there.
