How to make an unreal roasted tomato soup

Ginger in a tomato soup sounds unusual. It works beautifully though, bringing a really nice fragrant warmth. Give it a go.
600ml Vegetable Stock
12 Vine Tomatoes
400ml Coconut Milk
Knob of Ginger
5 Cloves of Garlic
2 Red Onions
1 Red Chilli
Bunch of Coriander
Loaf of Sourdough
1 Tbsp White Wine Vinegar
Salt
Pepper
Olive Oil
Step 1.
Preheat your oven to 180°C/356°F.
Step 2.
Halve the tomatoes and place on a baking tray (chopped sides facing upwards). Drizzle olive oil over the tomatoes. Add the garlic cloves (skins on) to the tray along with the ginger (skin on). Sprinkle a pinch of salt over the tray. Roast in the oven for 20 minutes.
Step 3.
Remove the baking tray from the oven and move the tomatoes over to one side of the baking tray.
Step 4.
Slice up your onions, add them to the tray along with whole red chilli. Drizzle olive oil and salt over the top and place back into the oven for 25 minutes.
Step 5.
Take the tray out of the oven and peel the skin off the ginger and squeeze the garlic out of the skins.
Step 6.
Add the contents of the baking tray to a saucepan, followed by the coconut milk and vegetable stock. Blend until a smooth orange colour. Add a drizzle of white wine vinegar and a pinch of pepper. Mix together.
Step 7.
Remove the soup from the heat and ladle into bowls. Top with a drizzle of olive oil, a few drops of coconut cream and a scattering of chopped coriander. Serve with two slices of toasted sourdough and enjoy!

Made this a few days ago in a big batch. My roommate made some bread and we've been in heaven all week. Just roasting everything made the apartment smell so nice 😊 didn't have an immersion blender, but was able to put everything into a stand up blender once roasted then transferred to a pot to finish it off. Highly reccomend

It bothers me meeting adults who dont know how to cook. One woman asked "how did you learn to cook?" I replied "Well, my mom made me foods growing up that i loved so much. When i started making my own money and buying my own food, i just made the shit she made me jut in new and different ways since I could buy all the ingredients. How do you not know how to cook though?" Theres just some things there arnt excuses for after the age of 25 i swear. lol

@@oliviaredito3437 Probably nothing as with the cream lol When I first started cooking chicken curry, I was obviously told to use coconut milk so I did. One week I forgot to get some, so I just used full fat milk instead, no difference in flavour so that is what I've used since.
As for tomato soup, I open a tin of Heinze, no need for this faff! 🤣

@@abc.216 I mean, yes of course lol, sorry if I didn't make it clear but I sort of implied that with 'veganised'. Saying 'substitute' in here by no way means a 'one for one' replacement. I've tried veganised (coconut produced) cheese & Chocolate and I personally find the Dairy originals to be miles better tasting: for me (and as an avid Resaurant reviewer having been to and rated numerous Michelin venues among many more) there's simply no replacing good ol' natural, original Dairy milk & cream!

This is got to definitely be the best tomato soup recipe I’ve ever seen!! The only thing I like to add is some roasted red pepper. Not too much that it takes away the tomato taste. But roasted red pepper in the background seems to lift the taste of the chilli pepper. Almost bringing out its floral notes. ❤

what i love about homemade tomato soup is how easy it is. just cook up the ingredients and then blend them all together. no need to carefully chop anything, its just gonna be pureed later! also, all you need is tomatoes and a liquid, water will work, everything else is optional so you can customize it to your liking!
Just tomatoes by themselves is much better in places like Turkey, Italy and Bulgaria. The tomatoes in England are just nowhere near the same, so adding ginger and garlic becomes necessary for flavour.
And no sugar. Most commercial tomato soup has tons of sugar and wheat flour in it. At least here in the USA.

I do this but with pumpkins instead of tomatoes. The taste is so much richer when baked first, it's unreal!

@@sebytro I've never actually done either, ginger sounds like a really good idea I might try that!! I usually go with a little bit of nutmeg, or just straight up pumpkin pie spice or allspice, I love going for a kind of like a savory pumpkin pie feel. Loove fall dishes

Before adding the coconut milk pour it through a mesh strainer to remove the skins and seeds for a smooth silky soup, it would make this amazing soup even better.

@@deadred80I hate fresh coconut. Canned Coconut milk doesn’t have a coconut taste to it. We use it to marinate boneless breast of chicken….makes the chicken very tender. One of our favorite soups is Tom Gah Kai….a Thai soup made with a base of coconut milk; it’s sooooo soothing and yummy. No flavor of coconut….just a dreamy creamy taste.

I made this soup today. I used red bell pepper instead of chilli pepper. I baked in glass jar so mine werent as charred as his but it was decent. Taste was so good we licked everything off. I also added some basil leaves instead of cilantro and some green onions. Thank you for this recipe.

Made this today. Roasted outside on the grill. Tried it chilled, because of our hot weather now. It was ok that way, but I preferred it hot. I don't know if I have ever eaten cold soup. Anyway, with many of the comments in mind, I will try it as a sauce/curry base as well. Finally, if you have removed the roasted ginger, substituted dairy for the coconut milk and added Italian basil instead of cilantro, I am sure you made a delicious soup, but you didn't try THIS soup.
A tomato soup with ginger and coconut milk? That’s insane! I love Thai, Japanese and Indian curry but there’s too much spice that I don’t have, but this looks amazing. I bet it will be even more amazing if basil was added into the mix. Tomato and Basil are a perfect a pair, Basil and Coconut mil is another perfect pair, so I would bet Tomato, Basil and Coconut Milk will be a heavenly pair.

If you think you don't like tomato soup, allow me to direct you to Chef John's tomato bisque at Food Wishes. I haven't tried THIS recipe, but I have tried Chef John's, and it is glorious. You have to use the canned tomatoes he specifies, though. No substitutions.

As a Mexican, I can tell you you can use this as a base for tortilla soup too, just make it salty, no coconut, add tortilla strips, fresh cheese and avocado!

@@oOMXROo the tortilla strips are supposed to be fried and crispy, you add them to the soup that is supposed to be a little thick so the tortillas don’t get soggy to fast, but yes, at the end the tortillas will be soggy, but it taste so good.

It is a great dish for lazy days or simply when you don't feel like cooking something too elaborate, mom prepares it and accompanies it witt: cut avocados, corn, cheddar/emmental cheese, sour cream, croûtons, tortilla chips...as toppings, you can add the ingredients into the soup, to your liking, it really gives a nice touch and complètes the meal and it is called "Sopa Mejicana" its translation being: Mexican soup (little disclaimer: I'm not claiming this dish to be Mexican, it was just introduced to her as such) enjoy 😉🤌

Depending on where you're at I recommend adding either a pinch of baking soda or sugar to cut out the sharpness of the tomato. Here in Australia the vine tomatoes are VERY acidic in flabour.

I highly recommend a white wine deglaze. Water just makes the soup more watery even if it’s a little. You could also use hot stock.
Make mine exactly the same. But no ginger. I do add a bit of sugar to take the edge off. Also I add fresh basil after I blend it. Delicious.

Maybe not use the ginger and chili and instead add thyme and coriander or parsley stems to the confit, garnishing with the coriander or parsley leaves. Use at least some of the garlic to make garlic bread, the tomatoes don't need it all. But definitely real cream, no coconut. This is for those like you and me who don't care for coconut with tomato soup.

u can get the thicklening of the coconut milk and the "twang" of the vinegar by simply using yogurt to substitute the two. trust me it works and its delicious. especially if you are making "cold" soups
British food is really good and their produce is much more fresh than ours in the states.
