    We LOVE spagetti squash for the "noodles" for spaghetti. We cut a hole in the squash big enough to drop a couple garlic cloves into and bake it, then we cut in half (so much easier than when raw) and scoop seeds then pull out squash, add butter, garlic, s&p. Top with spagetti sauce. It's so yummy!! And those unneeded carbs don't even get in the mix. We have a work from home (sitting) lifestyle so carbs have to be watched so they don't go into stored fat mode and then insulin imbalance. For those who work physically the carbs in flour based noodles are OK. But we can't mess with them especially in winter when weather tends to cut down on physical fun as well.     Love the cabinet color. My great grandfather was a finish carpenter and he made my
    Mother’s cabinets. When mounting her sink he had her stand in front of the sink, she hung her arms into the sink and put her hands in a flat position. Then he measured so that the bottom of the sink was the bottom
    If her hands. That’s how he mounted her sink. She said it was the perfect height and depth for her and she never had a back ache when doing kitchen chores. I know this sounds convoluted but it’s genius.

    With a large family, growing up, even back in the 70s, my mom, raising 9 children and caring for my great grandma, added shredded carrots or zucchini, to many recipes that had hamburger and tomato products in it, to make it go a lot farther, and to add veggies into our meals, without us knowing it. Every year, she and my dad had a huge garden, and she canned 300 quarts of tomatoes, to last us a year! Now that I'm 61 years old, and have gotten into canning more than the basic apple butter or salsa I've made in the past, I've been trying new "meals in a jar", since it's just my husband and me, and with the many health problems I have, I like knowing he can open a jar and heat it, to have a nutritious meal, and he doesn't have to buy fast food.

    I realize that I'm watching this a year later and you might not see this. But when you were talking about " people taking notes" it made me realize that I haven't heard you mention anything about "save/share the video " like other people do.     I find weighing my ingredients now makes my recipes come out better. I.e. 1 cup flour = 120 grams. I also like that it eliminates measuring cups to wash! I also keep a plastic mallet and a hatchet in my kitchen to open hard squash. I’m 67, and it’s getting harder every year! I find myself reaching for that mallet often. Stubborn ice…no problem! Bone won’t separate from meat…no problem! And it’s washable.

    When I had my kitchen done, I had the cupboards set on a 2x4 set on the 4 inch side.worked very well. Then glued 4 inch rubber mop boards around bottom.

    Sage green is pretty much my favorite color, being as I am a redhead with green eyes hahaha, love the new paint! Copper hardware will be perfect and so awesome, and if it's bare copper the patina will be amazing over time. The new color is so mucb lighter and brighter feeling too. Butcher block counter with farmhouse style sink sounds gorgeous, and putting it on top of existing sounds like it will work great for your height and purposes. The tall china cabinet to the right of your stove, sounds amazing and will look lovely and serve a great purpose for storage of the cookbooks and antiques you mentioned. Perfect timing too on your squash prep, I have a spaghetti squash planning to cook either tonight or next couple of nights - so seeing how you prepared yours is so helpful. 💚

    Love that color! Mom painted her kitchen that color in the 80s. I'm living in her house now, and the color has never changed! ❤ The countertops are the pink formica from way back...50s! Still on great shape, the metal trim all around. I love it!

    Julia Child talks about the French bread problem in one of her books that it does not come out the same in North America. I think she attributed it to the flour and worked out a solution. I’ll try to find the reference!

    I would re-consider doing laminate counters along your perimeter cabinets. That way you can do a nice light colour that will help to brighten up your space. You already have so much wood and laminate has come a long way and can look amazing and of course is so durable. When we updated our main house we did a crystal finish laminate counter which is a small-scale texture (similar to what they do on a curling rink ice) which imparts a brighter, more durable surface and I've never regretted it. I did butcher block in our laundry room where I can control the conditions and don't have to worry so much about the maintenance and care.

    I have also made acorn and butternut squash stuffed with meat, pretty much like this one with the spaghetti squash, it is delicious with all squashes :)

    Hi Chelsea, I am new to your channel and loving it because we are basically twins! Lol. I have curly hair, am 6'1, morning person, and am in the middle of kitchen expansion while trying to finish canning from my first big year of gardening.
    This Northern Nevada girl is super jealous of your beautiful lush homestead though. Thanks for sharing your relentless work ethic. I have been finding it hard to find the motivation to finish the kitchen, while also working a few days and chauffeuring my 4 kids. Your drive is contagious. ❤

    I’ve marveled for a long while how you cook for such a large family, and also with the number of dishes you prepare, that you have one, rather simple, stove. I know you use Martha, but not all that much. It’s taken me into my 70s to realize that simple is much less stressful! Smart girl. 🤗

    We had oak "Butcher-Block" (which shows end-grain) counters. Ours (and yours?) was actually short oak strips showing side-grain. We too had a "Farmhouse-style" sink with front apron. Like yours, our dishwasher is to the immediate left of the sink. We had water damage around the sink despite always drying the wood whenever it was wet. Also, the heat and humidity from the dishwasher led to serious cracks in the wood above it (despite full wood-sealing and a layer of aluminum on the bottom of the wood). We replaced all our counters with granite, but really did like the look of the wood. If I were you, I'd consider an impervious countertop along the sink wall and maybe a wooden countertop between it and your range.

    Love the cabinet color; so pretty! The butcher block will look great too! As to the French bread hunt, after living in Europe for awhile I too began the hunt for a superlative French bread technique/recipe. I came across the recipe in Baking with Julia and haven’t looked back. I autolyse overnight and then use the recipe in Julia Child’s baking book. It is excellent and will transport you in spirit to a bakery in Paris, IMO.

    My late husband and I farmed and had a large garden. We grew spaghetti squash before people knew about it. My husband Earl and I met after I became a widow. He was a bachelor. Earl does not like spaghetti squash so quit cooking it. Daughter brought over two small ones yesterday for me.
    I turn 80 years of age on the 20th of this month.
    Sauce sounds good. Will try.

    Love my butcher block counters & island. We use Clark's Cutting Board soap, oil & wax to care for them. I like the coconut or the orange & lemon.
    The color you chose is light & soft. Looks like the color of the kitchen walls at my dad's place. He went with a soft yellow for the cabinets.

    The butcher block will be great. We have a Belfast sink (farmhouse style sink) with butcher block countertops and you can put a protective oil on the countertops, like Osmo Oil. They have lasted beautifully. It is going to look so good.

    I had butcher block and changed to stone. It’s easy to scratch and doesn’t always look clean . Plus it requires more care. Consider stone. So much easier to look after.

    Oh I like the idea of butcher block type counter tops. You can always get a clear vernish that is used for boats. That stuff really can have a lot before it would damage your countertops. I had that in my first kitchen. We had wooden countertops and we repainted them and put 2 coats of the varnish on. My partner had a little boat so we had the stuff handy. These days no boat but I still keep a tin of that varnish handy.

      Just make sure any varnish you use is food grade. Some outdoor varnishes have uv and mildew inhibitors in them.

    I love your paint color! 🤩 We recently applied white subway tiles as our backsplash, and it has been easier to keep it clean. It also brightens the room up a lot! Copper handles will be a great blend between your paint color and the butcher block. Copper is a classic in the kitchen, too! Copper and cast iron...nothing better! It took us 2 years to complete our kitchen, bc we ordered countertops. We fixed one side one year and the other side another year. Somehow, we were able to locate all of our cabinets and countertops! Whew! 😅 It fun to design your own kitchen!!

    I love the color you've painted your cabinets. That's my favorite color. The antique cook books, you need to keep antique books protected from from light. It will cause them to bleach out rather quickly. Maybe you should put some kind of cover on them. I wonder if you could use a color copy machine to copy the books and make some kind of cover that would show what they look like but would protect the original covers?

    A word, if you are getting a farmhouse sink, please measure the front apron and make sure it won’t hit your cabinets and doors underneath. Many do not measure and end up having to cut the cabinet doors as they won’t fit. Most sinks are meant to install as you build your kitchen not as a remodel. You will save yourself a lot of issues if you measure first.

    I regret putting my wood countertops near the sink. Whenever I have the time and money, I’m going to switch out the pieces right next to the sink to something else. I love the butcher block for the main part of the counter that doesn’t regularly get splashed on.

    Just a heads up that if it’s a ceramic-type sink, you might find you get a lot of broken dishes with the kids.. I found that just a slight tap leaves chips etc. Metal is much more forgiving. ❤

    For Garlic Bread try Garlic Salt and a little bit of parsley…so yummy! Sometimes I will butter and garlic salt it and add cheese and pan fry until melted and toasty.

    I heard that about squash and pumpkin seeds being good for livestock when I was just a youngun.
    It must work cause we never had a problem with worms at all, and we fed them to cows, hogs, chickens and ducks.
    If you cut spaghetti squash around the middle instead of lengthwise you'll get longer strands that look more like spaghetti.
    It don't matter that much, just a presentation thing.

    The idea of the cupboard for your books is a great idea, but you really should get a range hood for above the stove to suck up the grease and smells and so the new cupboard doesn’t get covered in dirt and grease. You don’t need to duct it to the outside they make recirculating ones and they aren’t expensive.

    I have heard that if you poke a few holes in your spaghetti squash and pop it in the oven for 10 minutes it will be soft enough to cut easily.

    I wanted to suggest a vintage glass front gun cabinet for next to your stove. Not sure if they are available where you are but very common and inexpensive where I live. I have seen them upcycled to display colorful quilts. It would fit nicely next to your stove and the glass door would protect the vintage cook books.

    Your stuffed squash looks delicious and kudos on your baking of the French bread! For a killer garlic toast, mix softened butter, garlic powder, mayo and parmesan cheese and spread on bread slices and bake as usual til golden and slightly bubbly.

    When you get new cabinet frames, get them custom made, even if that feels like a splurge. I lost critical interior inches of space in my uppers & lowers when I did store bought cabinets even tho I custom ordered the sizes and finishing. My uppers lost almost two inches, the under sink area got messed up because of the box construction, and all the old frames were one piece on the inside, which gives all kinds of room I don't have now. I love my new kitchen, it's beautiful, but if I get to do another kitchen I'll pay a local cabinet maker, for sure.

    You are correct about the squash seeds combating worms in livestock. Especially pumpkin seeds. Lots of farmers feed their cows leftover pumpkins. Isn't nature amazing!!

    I saw the other day a person poked holes in their spaghetti squash with a fork, put it into the microwave for 5 minutes then it was easier to cut and deseed.

    Hi Chelsea, I’m sure this is something you’ve already thought about so I’d like to already apologise in case it’s a moot point: the antique cookbooks in the china cabinet next to the stove would make its shelf life smaller - the steam and moisture generated by food being cooked on the stove may mould your books!
    I just wanted to mention that selfishly because I love the videos where you make things using recipes from those old time cookbooks 😅

    Ps have read somewhere you get a very nice crust on your French bread by brushing it with a little water just before baking.🙏🏼💙
