My father loved my mother's carrot cake. She used the frosting for a German chocolate cake. I've never seen anybody else do that. So good!

I've made this cake several times Paula it's soooo delicious. Thanks to your grandma.
The first time I made a carrot cake, I used my great grandmother's recipe. I think it had something like 5 or 6 cups of grated carrots and probably that much flour as well.
I had to keep changing bowls because there were so many ingredients. Everything finally ended up in my largest bowl, which was bigger than a dishpan.
Then I was faced with the dilemma of putting it into pans to bake. I ended up using 4 different pans including 2 big ones, making a huge tiered cake, big enough to feed an army!
People ate different back in those days, this cake would have fed the entire family and all the farm hands! Today we make a two layer cake and that's enough for the family and maybe even friends!
I haven't made another carrot cake from scratch since then. And I closely examine recipes from my great grandmother now that I know they will feed the county.😋
If I ever use this recipe again, I think I would try for 2 layer cakes. But I think I'd still get at least 3 of the 2 layer cakes!😚
Or maybe I'll just try your recipe Paula! It seems like a more reasonable size!😉

I will definitely try this recipe. Maybe even today. But I always add crushed pineapple and coconut to my carrot cake. And along with the oil I had a stick of butter. I like it really moist

I love carrot cake. I love it so much that it was my wedding cake. The only thing is, I just don't like raisins in my carrot cake. I'm kind of picky about my carrot cake.

She said grated flour. Kinda confusing how much flour to use...I really want to make this but not sure about the measurements
Can we use melted butter instead of all that oil?
You can. But you would need 2 cups of melted butter. And know that unlike cakes made with oil, the cake with butter will be harder and not be as soft after refrigerating.
What size pans?
3 cups of grated flour....😂

I do not put raisins in carrot cake. I do not really like raisins.
I eliminate the raisins, too, but I always use pineapple tidbits.

I've been making this cake for years got from Paula's Web site. I'm a classically trained French chef and I will say this has got to be the best cake I've ever eaten I do make My own frosting though. Grandma hires must have been a very sweet lady thank you for sharing chef Paula as you are very sweet yourself 😋

Should have made the cake slices smaller. Way too big. Seems would be an expensive cake slice at that point.
