Marie, this is exactly the carrot cake recipe that my mother served my, at that time future husband, around 64 years ago. My husband now of over 60 years has this cake for every birthday, and my 2 sons always have it too. There are no raisins, nuts, or pineapple in mine either. This is the original carrot cake recipe. Marie, I have missed your videos so much. Even with all my years of cooking, you have taught me so much. I hope that you tell me that you will be back soon. Betty Phillips in Alabama.

I made this exact cake for Easter this past weekend, but did not discover your video until today. The recipe was published over 65 years ago in the Boston Globe newspaper and my mother had cut it out and saved it. She passed away 23 years ago but always when she made carrot cake, this was her go to. I do ad toasted chopped walnuts or pecan (depending on what I have on hand) to mine, but coconut, pineapple and raisins don’t belong in a carrot cake, then it would be a “fruit” cake.
This looks so delicious. I can’t wait to try it.

I'm so glad youtube put your pie crust video in my feed. Once I watched it I saw carrot cake, two of my favorite things that I'd rather make at home rather than buy. I call it cream cheese frosting but I don't have too many strong opinions on that subject so icing it is for you! I look forward to seeing more of your videos.

I just recently found you so I’m going through some of your older videos to catch up and I love the way you cook and explain things. That said, I also looked at some of the comments when you asked if it was frosting or icing cause I wanted to know what people said, and I’m shocked at the nasty comments I saw! I wish people would just watch a video and if they didn’t like it, then move on and keep their negativity to themselves. There’s so much hate in this world and it saddens me. You keep doing it your way and don’t pay attention to those idiots who have nothing better to do. I have subscribed to your channel and I’m pretty sure I will be happy I did!

Marie, thank you, thank you. 🤗This cake looks soooo delicious. I haven't pinpointed why I love carrot cake so much, but I think it's because of the nutmeg. I agree with you on being a purist not adding raisins or anything else. What makes this recipe even more perfect and timely is that I bought a 5 lb. bag of carrots yesterday!!!! Also, I make a lot of breads and so many recipes are from other countries. Converting ingredients with on line conversion tables is just not accurate. I bought a kitchen scale years ago and use it every time I bake. It's a wonderful kitchen tool. No more guessing. I thank you for making this wonderful video and I cannot wait to start shredding! 🤗💖I'll let you know how it turns out. I promise.

My favorite cake ! I agree with you, pure carrot cake is the only way for me, I can tolerate nuts if I have to but absolutely no raisins. I don’t care if it’s called icing or frosting as long as it’s on the cake 😀🤣

I am making this cake for my sons’s birthday today. I just took them out of the oven and they smell so good! They are cooling right now before I put the icing on. I had to think about that for a moment, Is it icing or frosting? Like the old saying goes, “Icing on the cake”. It refers to something positive that enhances a situation that’s already good. I love your comment about reasons, if you’d like reasons, we can’t be friends. My husband loves reasons, he even goes out of his way to buy a box of sun maid raisins, so he can eat them. I, on the other hand hate reasons. Raisins or nuts do not belong in carrot cake. I guess I’m a purist, but I have made carrot cake with coconut and pineapple in it, although I didn’t like it. So I can’t wait to make this plain carrot cake.

I am now wondering if over beating my Pound Cake is why they no longer raise nice and are not pretty? I won a Blue Ribbon years ago and since then they are so disappointing. I love carrot cake and plan on making this.... along with my Pound Cake this weekend! Thank you and Merry Christmas!

The question is it icing or frosting. I always thought you ice the cake and frost cupcakes but it does not really matter. As long as they taste good 😊

I always double the frosting recipe.

To me icing is not fluffy at all and will stiffen as it sits. Frosting is airy, fluffy and soft.
PLEASE POST THE INGREDIENTS
There are many ingredients that people like in their recipes. It's a curosity why you carry on so strongly about what you don't like (??) Okay, I'll remember not to include raisens when I make you something... which will likely never happen. Why waste time telling us what you and your daughter don't like?? It alienates you from so many of us who love our cakes loaded with raisens, pineapple, shredded coconut, the whole shebang. There's plenty going on right now that alienates and divides human kind. Lets not belabor something so trivial as raisens. They're such a tasty little treat. 😂
