I can't wait for your global tour of sausage to arrive in Australia. You can take a Bunnings (our version of Home Depot, who sell sausages on white bread with caramelized onions and a traditionally tomato sauce/ketchup) snag and convert it from an existing sausage, to a sausage filling, and then back into sausage.
I recommend giving the pre-made thai sausages you see at places like H-Mart a try, especially the dried ones. Good stuff and at least you don't have to scrounge together all the ingredients and figure out the proportions yourself lol
A good Will It Blow?, not too severe of a burst, and a decent looking sausage? I like it. Picasso. Also, on the subject of his score of the sausage, in his defense, he *did* say he's never tried this particular sausage until now, so I'd say a 2 1/2 out of 5 is a fair score. He's experiencing flavors and spices unexplored on the Ordinary Sausage Show, a couple of the ingredients weren't quite authentic (through no fault of his own), he's not sure if this is how it's meant to taste. Certainly, this looks like a tasty sausage that I would want to try sometime, and perhaps this could do with a Re-Grind sometime in the future, provided Mr. Sausage is able to obtain some of the more authentic ingredients for it. The casing may have split in part due to cutting past the albedo (the white pith) of the lime and taking some of the juice sac with it. If you can see fruit, you've cut too far. You want to cut just beneath the oil glands, which are extremely thin on the surface. Getting some of the albedo is totally fine.
You need to go to Uptown or Edgewater if you want to find kaffir lime leaves. Any grocery in Little Vietnam will have it. You can't go to Korean grocery stores and expect to find it there.

Might be a seasonal thing I dunno. I also wanna say I've found just the leaves at either Joong Boo or super H mart but again not 100% of the time.
