Recipe:
1 cup (2 sticks) unsalted butter, softened to room temperature
2/3 cup granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
2 and 1/4 cups all-purpose flour
1/2 cup raspberry jam (or however much you end up using!)
2 tablespoons of cornstarch
Your oven will be set to 350 degrees farenheight.
Start by creaming/whipping the butter with an electric mixer for a few minutes.
Then proceed to add in both the brown and granulated sugar. Whip again until fluffy.
Add in the almond/vanilla extract and single egg yolk. Beat this into the batter (not necessary to mix for as long this time, just get it all incorporated).
In a separate bowl, mix the flour, salt, and cornstarch.
Add the dry mixture into the wet mixture slowly. I added it in three sections, folding the batter in between each. Be careful not to over mix the dough, just make sure the flour is incorporated. Remember that this dough is much more ‘dry.’
You can use your hands to combine fully, and once it’s combined, roll the dough into a small ball on a cookie sheet.
You can use a measuring spoon to then create the indentation in the middle or your thumb (hence the name).
Scoop your jam of choice into the created space, and take the sheet of cookies to your oven for 13 minutes (14 at most).
Allow your cookies to cool, and you can then top with powdered sugar, nuts, or a simple frosting made from podwered sugar, milk, and vanilla extract.

We got a Squeaker cameo! Your baking setup is attractive. The candles add a nice homey touch. The Bonne Maman is my favorite preserves brand. I love their fig product best, but all of them are tasty. I would eat it right out of the jar, switching between flavors. Almond extract sounds like a good complement to the vanilla. That was an unfortunate visual of the melted frosting, but you saved the day with the powdered sugar. You are doing well with these baking videos. Brings back many memories of childhood.

These baking videos are so good. Maybe the logistics would be tricky, but I would love to hear some of the ambient sounds from the kitchen as you bake, mixed in with the voiceover.
I mention it a little at the end of the video, but I do have a pretty noisy household so it’s just a little difficult to make it work in a relaxing way, but I’ll do my best to make it happen one day! 🧡

Hey just a suggestion (by no means do you have to follow it, feel free to do whatever makes you happy!) But I absolutely LOVE baking videos and I find that the fact this is close whispered without the actual baking sounds takes away from the whole point. There's nothing wrong with the close whispered just wish you kept the actual sounds too.
Hey there, towards the mid-end of the video I address this. I live in a very busy and hectic household, so getting to record without loud sounds in the background is not often. So the sounds wouldn’t be *just* baking. I have a video coming out this Sunday where I was lucky enough to have a quiet area and include the sounds, but I do my best to make it work even without the sounds. :)

Hey Haley, what would happen if you put the jam in after you baked it? Could that create a different texture experience, or do you think that wouldn't work very well?
I really enjoy your videos, they're relaxing and make baking seem much more approachable.
It would still be quite tasty, but it would be a lot more thin/wouldn’t hold as well and wouldn’t last quite as long. As long as you eat them up, however, I’m sure they’d still taste great! 😊

Never been super interested in baking before and I might just be hungry, but I might have to give it a try! How do you overcome the fear of messing it up? I always worry I'm gonna do something wrong and ruin what I'm making.
Baking is honestly such a trial and error process that it’s absolutely okay to experience those mess ups, but with this specific recipe, it isn’t as strenuous as making a cake or a good chocolate chip cookie batter, these cookies are much more forgiving! I can promise you that. Any way that you make these, I’m sure they will taste great. And if not, I just buy some more butter and go again another day if time allows. :) 🧡
