Those small plates are called "banchan." They're not appetizers but side dishes or condiments to complement your main entrees, clean your palate, etc. Most good Korean restaurants give you a dozen or more banchan. I've been to several in the U.S. that gave almost two dozen. Be careful, they're filling like dim sum.
Like the comment below those are not appetizer but banchan or side dishes. Korean meals always come with them. Your not suppose to dip the lettuce wrap into the banchan sauce. What your suppose to do is use your chopstick take a bit of the sides and put it on the wrap and one shot it...eat whole thing in one bite...the wrap is called ssalm or something like that. Also did you use the scissors? They're for cutting the meat as you cook. Purpose being the meat should be bite size/one bite...for one reason being the wrap is one bite so you done want huge piece of meat or overstuffed wrap.
Another great episode! Thank you!
