Everyone has a different way of cooking jambalaya. I enjoy eating all different variation. I used to cook almost the exact same way as you just did but after 30 years of cooking jambalaya and winning many cookoffs I have found an easier faster way. Thanks for showing us another example of good Cajun cooking.
JAMBALAYA IS ONE OF THE TRICKIEST DISHES TO COOK IN A 5QT POT, BUT TO COOK 20 GALLONS, AND FOR IT TO COME OUT LIKE THAT, HAS TO BE 20 TIMES TRICKIER. THE COOKING PROCESS IS TOTALLY DIFFERENT, AND YOU DIDN'T EVEN USE A 2-1 RATIO. I'M A VERY GOOD JAMBALAYA COOK, BUT AT THE COST OF SEVERAL HUNDRED DOLLARS WORTH OF INGREDIENTS, I WOULD NEVER ATTEMPT IT, EVEN IF SOMEBODY ELSE PAID FOR IT !
