500g squid
Marinade:
1/4 tsp salt
1/4 tsp pepper
1 egg white
4 tbsp cornstarch
4 salted egg yolks steamed and mashed
50g butter
2 tbsp chopped garlic
4 red chili padi
4 stalks curry leaves
1 tsp sugar
1/2 tsp salt
