I like the way you do as far as measurements, different stages in your cooking when you say "everyone or people or you know how to do something and don't have to unwrap,or whatever it is you're doing,make people watch unnecessary steps!! An easy way to do a "crust" on the mini cheesecakes is to just drop a whole Nilla Wafer cookie into the paper cup liner before spooning the cheesecake filling over it! It makes it more of a true cheesecake to have a sturdy crust at the bottom. And, it tastes delicious!
I have been making these for years & they are always delicious & a highly requested dessert. I’ve always placed a Nilla Vanilla Wafer at the bottom. However, I’m sure Meme’s are quite delish !

I live in the Texas Hill Country and not too far north of us is the town of San Saba, which is a huge Pecan growing area. But there are several Pecan orchards in Texas. We also grow great Peaches, Strawberries and Blackberries in Texas. We love Pralines. One of my past supervisors at work gave me his recipe for Pralines and they look very similar to yours except it calls for buttermilk and baking soda. But you really have to work fast getting them out of the pan. I’ll have to try your recipe because I don’t keep buttermilk on hand and most of the time I can’t find anything except lowfat at the stores and I don’t like that, it’s too runny. I just got your cookbook in the mail yesterday and can’t wait to try some of your recipes.

That's where my Grandparents lived..My Father packed Pecans & Cotton on the trains as a high Schooler. Cameron has some very tasty & meaty (not dehydrated looking) Pecans! My dad was an engineer at Texas Instruments back in the ‘80’s but he also had a “hobby farm” that produced pecans in Texas. He loved pecans on top of praline ice cream, but I never knew what a praline was, so thank you! ⭐️SFJ⭐️

In all these small Towns including mine we have Peach & Pecan Orchard's as far as the eye can see driving a long our Roads. Luckily our Farmers grow some amazing Strawberry's for us as well. I recommend finding someone local that grows their pecans and buy from them. The pecans are normally better than what you can buy in the stores. And probably a little less expensive.
I love and trust all of your recipes. However, for pralines, it’s much easier and quicker to add baking soda along with the pecans after it reaches the soft ball stage. The mixture seizes up very fast and is ready to spoon out without waiting and having to stir.
