  • Today, we will be making Picadillo (con papas/with potatoes)!

    Ingredients & Measurements
    -1 can (14.5 fl oz) diced or whole tomatoes
    -1/2 medium onion
    -2 large cloves garlic
    -Cilantro (optional)
    -1lb lean ground beef
    -Seasoning for meat: Fiesta Uncle Chris's Steak OR add salt/pepper/garlic
    -1 tsp cumin (optional)
    -2 medium potatoes chopped
    -1 large carrot chopped (optional)
    -1 cup water or beef stock
    -1 tbsp beef broth seasoning (for flavor)

    Step by Step Explanation

    Blend diced tomatoes, onion, garlic cloves, and cilantro.
    Cook meat on medium heat on stove; add the steak seasoning and either 1/4 of a diced fresh onion or use onion powder.
    Stir until meat is brown and onion is translucent. Add 1/2 the tomato mixture. Stir in vegetables, cumin, and beef broth seasoning. Add water or beef stock.
    Bring to boil, then cover and simmer until vegetables are tender.
    You can serve with tortillas, Mexican rice, steamed rice, and avocado slices.
    [TIP: Store other half tomato mixture in seal-tight container in freezer for your next meal.]
