Mexican Rice | Follow Along Recipe

- Today, we are making Mexican Rice. This is a great side dish to have!

Ingredients & Measurements:
-1 cup white rice
-1 can [14.5 FL OZ] whole or diced tomatoes (may substitute fresh tomatoes)
-1/2 medium onion
-2 - 3 cloves garlic
-Few sprigs cilantro (optional)
-3 cups chicken broth
-1 - 1 1/2 tbsp chicken bullion seasoning
-1 tsp cumin (optional)
-1/2 cup peas or mixed vegetables [can or frozen] (optional)
-Olive oil (your preference) for frying

Directions:
Use blender to blend tomatoes, onion, garlic. and cilantro.
Fry rice in oil and stir until slightly brown (not burnt).
Add about 1/3 - 1/2 of tomato mixture and stir for about one minute then add chicken broth and chicken buillion seasoning (and cumin, if preferred).
Add vegetables at this time.
Bring to a boil, then cover with lid and simmer until rice is tender and liquid has evaporated (about 15-20 minutes).
Enjoy with a main course meal and/or beans.

Tip 1: Store cooked rice in sealed container in refrigerator and/or you can also freeze.
Tip 2: Store rest of tomato mixture in sealed container in freezer to use for later.
