Hello! Normally I never use cheese with fish either; however, classic pasta and bottarga seemed such a banal recipe to me that I decided to replicate the recipe of a famous Italian chef with 3 Michelin stars. I don't have them, so I can't say it's wrong. Anyway my tastes are similar to yours, I still prefer without cheese too.
