My 1st daughter made this cake for me today :) It tasted very similar to the strawberry whipped cream cake I had in Japan. The American cake has too much butter in it, so it feels a little heavy, but I really wanted to eat the light and delicious strawberry whipped cream cake that I had eaten in Japan. Finally I've found the perfect sponge cake! Baked this cake today and turned out AMAZING! I used two 6" pans, the cake rose in the oven really well and it didn't shrink after baking. Also cake layers was flat I didn't need to level it. Then I made my own frosting, I frosted it with coffee Swiss meringue buttercream, soaked cake layers with little bit of milk to moisten it, filled the layers with Nutella and omg... it turned out like the bakeries' cake! I've searched for days to find the a good sponge cake recipe and I'm glad I found yours! Thank you so so much! 💖 Subscribed !

@@margrietbarsati1939 I use gas oven, so I bake on the lowest temperature around 140 C to 150 C. If you are using electric oven, i think the temperature would be 170 C like Valentina mentioned in the video. But it depends on your oven, keep checking the cakes every few minutes. I'm glad to help 🥰

Those recipes were also incredibly difficult to follow since they involved the separation of egg whites from the yolks and incorporated the bain-marie technique. This recipe, on the other hand, was really straightforward and easy to follow. I didn't know what to expect but my cake layers actually rose and were soft and airy just the way that sponge cakes should. I made the cake using the recipe as shown for an event, and as far as I'm told, everyone loved it. So happy I found this recipe & video

i made it today one 6 inch using x0.4 of the recipe but i reduced sugar to 40g and it was just nice for me as I don't like it too sweet. Baked at 170C for 30mins. Sliced into 2 layers and the cake was delicious! so far it was the tastiest and most successful sponge cake recipe i've made out of 3 others! kept failing at Genoise method so this was great.. However, i only whisked the room temperature eggs for 6 mins as I only used 2 eggs for x0.4 of the recipe

Always bake cakes in the center of the oven; if you have an electric convection oven turn the fan off if you have this option, and bake with both upper and lower heat. Happy baking and Merry Christmas 🎄❤️

Hello and sorry for my late reply! The batter is a large amount to put into one 20 cm pan, it’s better to use a larger pan if you want to use only one pan, or to use a 20 cm cake pan with tall sides. In this cake the baking time should be longer. The cake is ready when a toothpick comes out clean.

I suggest to not wet too much the cake with the syrup, just a bit, because this is not a classic sponge cake and the whipping cream with the fruit release moisture to the cake. Hi amal! You can bake the sponge cake the day before, cool it down, then wrap it in plastic wrap and store at room temperature overnight. The day after you can whip your cream and assemble the cake. You can also make and assemble the cake the day before then store it in the frige overnight (but I suggest you to place strawberries on top just before serving). You don't need to add a syrup since whipping cream is the perfect watery filling for sponge cake; if you leave your cake in the fridge some hours before serve it, sponge cake absorbs the cream moist and the cake will be more soft and delicious. It's not necessary to divide the cake in three pans, you can just use one pan and then cut the cake in three layers, but when I make small and tall cake in just one pan, the cake usually comes out with a dome top! If you don't have this problem or you trim your cake to be flat, you can use one pan ;) let me know! Much love

May I know, the whipping cream used is diary or non-diary? Does it make any difference in terms of stability? As I'm staying at a warm place, will the cake melt quickly?
Hi Caroline! I've used normal diary fresh whipping cream (about 35% fat). In my experience I've noticed that non-diary fresh whipping cream or diary long lasting whipping cream is a bit more stabile, you can choose these types. Remind to always use chilled whipping cream (keep your whipping cream in the fridge for at least 8-12 hours before use it) and put the bowl in freezer for about 15 minutes before whip the cream. Happy baking!

i made it today one 6 inch using x0.4 of the recipe but i reduced sugar to 40g and it was just nice for me as I don't like it too sweet. Baked at 170C for 30mins. Sliced into 2 layers and the cake was delicious! so far it was the tastiest and most successful sponge cake recipe i've made out of 3 others! kept failing at Genoise method so this was great.. However, i only whisked the room temperature eggs for 6 mins as I only used 2 eggs for x0.4 of the recipe

Can I use cake flour, if yes how much do I use,and do I still use cornstarch? Because sometimes people use all purpose flour, and cornstarch to make cake flour. I want to make this so bad, because it looks wonderful.

Hello and sorry for my late reply! The batter is a large amount to put into one 20 cm pan, it’s better to use a larger pan if you want to use only one pan, or to use a 20 cm cake pan with tall sides. In this cake the baking time should be longer. The cake is ready when a toothpick comes out clean.

I made this one today and it was amazing🥰and a lot easier than other recipes i have watched,i also used honeydew instead of strawberry and it was delish🥰 question though, can i used sugar water to soak the sponge cake and decreased the sugar from the icing?its just i want a moist moist sponge cake hehe

I suggest to not wet too much the cake with the syrup, just a bit, because this is not a classic sponge cake and the whipping cream with the fruit release moisture to the cake. Hi amal! You can bake the sponge cake the day before, cool it down, then wrap it in plastic wrap and store at room temperature overnight. The day after you can whip your cream and assemble the cake. You can also make and assemble the cake the day before then store it in the frige overnight (but I suggest you to place strawberries on top just before serving).
You don't need to add a syrup since whipping cream is the perfect watery filling for sponge cake; if you leave your cake in the fridge some hours before serve it, sponge cake absorbs the cream moist and the cake will be more soft and delicious.

It's not necessary to divide the cake in three pans, you can just use one pan and then cut the cake in three layers, but when I make small and tall cake in just one pan, the cake usually comes out with a dome top! May I know, the whipping cream used is diary or non-diary? Does it make any difference in terms of stability? As I'm staying at a warm place, will the cake melt quickly?
Hi Caroline! I've used normal diary fresh whipping cream (about 35% fat). In my experience I've noticed that non-diary fresh whipping cream or diary long lasting whipping cream is a bit more stabile, you can choose these types. Remind to always use chilled whipping cream (keep your whipping cream in the fridge for at least 8-12 hours before use it) and put the bowl in freezer for about 15 minutes before whip the cream. Happy baking!

Hello, I live in Italy and we only have one whipping cream that is about 35% fat, so it’s not a heavy cream.
